Ranked #1 of 2 Bakeries in Cortez
Restaurant details

I am a native recently returned and this is my favorite place to hang out in Cortez. The staff is friendly and the treats and delicious. My favorites are the ladyfingers, cupcakes and hand pies. The cinnamon roles are good as well. It is a cozy little place and so it can fill up fast.

The Pie Maker has a loyal following but I am not convinced. The selections always look terrific in the photos but I often find that if you aren't there when it opens you will have meager choices. The space is small and feels kind of cramped. I can't say that anyone in town has better baked goods but this is not my first choice for coffee drinks. If you want to stop where the cogniscenti stop, this is the place, but I think you can do just as well and maybe better elsewhere in town. Nothing is bad here, it just seem to deserve the high ratings to my mind.

We ate in for breakfast. The fresh out of the oven quiche was delicious! Loved the delicate crust. I would come again for the Cranberry apricot scone.

Honest handmade excellence pours out of every facet of this gem. From the outside, the shop is as unassuming as a cube, except for the pleasing logo of blackbirds flying from a pie. But once inside, there is the cheerful color scheme with modern folk art on the walls, the heady aroma of really good coffee, the straightforward friendly warmth of the staff, and the case full of really well-made bakery products.
Where to begin? The pies are wonderful, full of fruit flavor set in a lovely flaky crust. The mixed berry pie was absolutely delicious. The carrot cake muffin was perfect, setting a middle course between flavor density and textural lightness.
Turning to savory, the hand pies were also excellent -- another flaky crust holding fillings such as spinach & feta or mushroom & walnut that are marvels of rich flavor. Bagels? Perfect, of course. The version with wild smoked salmon, sun-dried tomato cream cheese, capers, dill, tomato & onion was so good that my wife had it 2 days in a row.
The homemade granola was also a model of a sure hand setting a middle course -- rich in flavor while not oversweetened, perfectly toasted.
I should also follow up on that aroma that fills the shop -- a good rich locally-roasted coffee in several choices.
The bright wood carvings and whimsical paintings make it an inviting place to linger over your coffee & pastry.
This is a place where professional culinary training meets small town America organic hip. I recommend it highly.
