This review may seem super-critical, but this is supposed to be a 5 star GL hotel, and the review is based on what should be expected on this basis. This hotel is classified as 5 star GL, meaning, according to the gentleman on reception, it is almost equivalent to a 6 star hotel. Really? Ok, it is nice, a very modern hotel sitting inside an old 16th century building.
Our room, a junior suite, was very modern, but with very poor views of an old tower, possibly part of the hotel, with boarded up windows and thick bird droppings on the windowsill. Photos attached.The room was built round this tower, with floor to ceiling windows covered by thin curtains. The one other small window overlooked the street. The TV seemed to be an afterthought with cables running from it across the wall to the sockets. We've seen much more professional, neater installations in budget hotels. And the coffee making facilities were placed right underneath the TV which jutted out on an arm so you could crack your head on the corner!. The room had a separate shower room and separate toilet off of it but the bath and the basins were in the suite next to the bed. I could understand the logic of this if you had a view from the bath but there wasn't. The man on reception was very excited to tell us about the Japanese style lavatory in the room, but not so forthcoming on other facilities of the hotel (the small rooftop swimming pool was somewhat difficult to find). There was a sheaf of half a dozen photocopied tatty pieces of paper in a folder which comprised of the only information provided about the hotel and surrounding areas. Very unprofessional. In fact the reception person was trying to explain that they had 24 hr room service and was looking for the room service menus in the folder which weren't there so he quickly changed the subject.
We had booked half board and were quite looking forward to eating in the restaurant of a 5 star plus hotel. However, it appears that the restaurant is closed at the moment (quite possibly for the last 2 months) and the staff are very coy about when it is going to re-open. Therefore, our meal was served in a small room off of the bar. The room was tiny and set up with 4 tables. Another couple sat next to us but it was quite intimidating as they were close enough to hear every word of conversation. The meal itself was very good, but we were not provided with menus so when the first food came out which we thought was canapes,we later found out it was the first course. At no stage were we told what sort of meal it was (it was actually a tasting menu), but we were not asked about any preferences, allergies or whether we ate meat. And after 4 courses we had no idea how many more courses were going to arrive. After the 3rd course no one had asked us if we wanted any wine (we'd luckily ordered a glass of cava at the beginning of the meal) so we had to go to the bar and request a wine list and obviously, despite being in a 5 star GL hotel, there was no sommelier or restaurant manager. The barman serving our food was very pleasant, but the language barrier caused us both much stress.
The breakfast in the morning was good, although it is apparently an extra 18 euros if you wanted cooked breakfast which seemed unjustified.
Checkout was very poor. There were 2 receptionist but, despite the hotel being quiet, we had to queue to check out behind a group of people who wanted to split their bill several ways. And both receptionists were dealing with this one group rather than helping us check out.
The staff at the hotel are all really friendly, but cannot make up for the failings of the hotel. If it was graded 3 or 4 star you would forgive some of this, but a 5 star hotel should give you no reason for complaint.

Room tip: Don't bother with a junior suite. Not worth the extra cost

The Parador de Ubeda, also known as the Parador Condestable Davalos, is in the main plaza of the historic centre of Ubeda. It was built in the 16thC and altered in the 17th. It is a classic Andalusian palace built around a large internal courtyard. The large rooms are furnished in a style contemporary with its origins. We had hoped for a garden room but building work was underway: we saw these rooms that seemed ideal. Instead, we were given one of the grander rooms overlooking the plaza. The bathroom was in a classic style and functioned well. The Parador is in a restricted area but car access is allowed for unloading/loading. Parking is a short distance away in an open public car park. The staff are most helpful. The restaurant and bar menus reflect the Parador chain. For breakfast, we preferred something not quite so grand in a nearby local bar/café.

Room tip: A garden room with direct access to a small courtyard garden may appeal.

Somewhat surprising to find such an upmarket hotel in what is a very small town, but we're not complaining! Luxurious, comfortable and very large hotel room, very good restaurant and central location make this an ideal place to stay when visiting Ubeda and the surrounding area.

This hotel is very beautiful. The rooms are stunning! Each room is huge with exposed stone walls and luxurious decor. The food in the restaurant is excellent. The only downside is that the staff seems a bit disorganized, but very friendly and helpful. Nonetheless, I thoroughly enjoyed our stay!

Room tip: Make reservations to park your rental car.

Loved this place, the rooms are beautiful, the spa is grate, the service exceptional, just a Joy to be here. For couples it’s amazing. The food delicious and in the Bar they have a drink call “Paloma” yum!
