As two physicians with little time off together we (Colleen does the research) are much more into experiences than entertainment, but if you look for one thing and then get both, how good is that!? The CVI would have to be a well kept secret for those both informed and uninformed about grass roots culinary endeavors that have profound ecologic and health implications. We both do a great deal of physician wellness initiatives, and I would have to strongly state that CVI should be the mountain where Moses constructed the commandments or the Rock on which Christ built his Church. "To See Things In The Seed is Genius" Jamie Simpson entered our suite (by the way there is only one, but you would think it built for a Presidents Wife, who by the way has been here) as a very unassuming and humble young man who turns out to be the visionary of a new path. We began to talk of "what is here" which was a little like putting the first hole in the Hoover Dam of knowledge and perspective. Colleen is the "foodie" and I appreciate the botany inclusive of their pasteurized soil and ecologically injected 'proper bacteria' for the edible flowers, information that flowed from this young man's mouth like a highly desirable menu. Some of their greenhouses are regarded, during certain growing periods, as "clean rooms" (we couldn't go in), in a pesticide free environment of bee keeping, composting, naturalistic living aside the Huron River. "Farmer Lee Jones" is likewise a visionary, along with his bride Mary, of the implications of a property dedicated to bringing people back to the land and the land's opportunity for health and well being. You couldn't go to Disney World and hear as often as we did: "Can I help you? Would you like me to show you? Did you know, here try this. Let me know what you need ("we usually work from about 7am til midnight and you can walk the fields with me around 8am"). Deer, pigs, chickens, nuts, berries, 600 varieties of vegetables, Golden Retrievers and a pupply, plus Eagles and a nest on the property with a 5 star bedroom and a Viking gas range in our kitchen...what more could a couple want? Nothing pompous, internationally known. Not pretencious, because thet don't have to be when their motivations, vision, and intensions are of right mind. Caution: Don't go there if you don't GET IT! This place is sincerity in action, from one's palate to there satiety center. Real and Palpable. Do you think we're planning to go back?...HaHa, C&C

The CVI exceeded our expectations, staff was effectively dedicated to making our two days staying at the luxury chef's suite memorable, master chef jamie Simpson and staff Profesional well organized and extremely comfortable working class ambience.
The farm is truly amazing the jones family are simply adorable.
All in all and unforgettable place in the middle of nowhere on Milan, Ohio.on scale of 1 to 10, our experience and staying was 11.

We did a cooking class that featured winter vegetables. Chef Jamie is so knowledgeable and helpful. I truly enjoyed this afternoon class. The class is small (only 10) I highly recommend this for a gift or for yourself!

I attended the CVI Disney Chef's Event in May of 2015!! The evening did come with a price but was well worth the cost. The food was amazing. I was seated with some very nice folks and very much enjoyed the entire experience. Farmer Jones is a very nice person. I would highly encourage anyone to participate in one of CVI's culinary events. The evening is more and different than eating at an upscale restaurant.

The Culinary Vegetable Institute features monthly Earth-To-Table dinners with chefs from around the globe who create special menus to feature local seasonal produce. Aside from the exceptional creations that come to the table, the kitchen is open which allows diners to watch and interact with the chefs. A sitting area by a fireplace adds a lovely touch on cold evenings.
