This restaurant was packed even at 8:00 on a Thursday night- and I can see why. All 3 dishes we shared were great... the cerviche, churrasco and encocado. And with a reasonable priced bottle of wine... a great value and delicious food. Will try to return the next time I am visiting MSP.

I was very pleased with the food, service, and overall ambiance. I strongly recommend. Good selection of spices and condiments to go with the respective dishes.

Don't be fooled by the place from the outside. Once you step inside, you'll know you're in a legit and authentic place serving up a great and diverse list of items. The menu selection is minimal but no matter what you choose, you're likely not to be disappointed. A great place to introduce yourself to Ecuadorian cuisine!

Because then you can steal a taste from their plate! The first thing you will notice are the amazing smells that drift past you as the plates stream out of the kitchen. Chimborazo is a small restaurant with a colorful, quaint atmosphere. We were fortunate enough to enjoy a meal outdoors on a late May evening.

We started our meal sharing Muchin de Yuca (croquettes served with a side of aji criollo, a pesto like sauce included with many offerings) and Empanada de Carne (a picturesque pastry that made my son's Instagram feed). We shared three entrees and could not pick a favorite. Harnado con Papas is savory hunk of pork that melts in your mouth. The llapingachos (thick potato pancakes) are the secret side to this entree that should not be overlooked. Encocado (with shrimp) is the dish that will bring you back. The hint of coconut is so light in the sauce...hmmmm. Saltado (we enjoyed the chicken) has a wonderful heat that almost anyone can enjoy (except your overly sensitive Mother-in-law).

Chimborazo is bustling restaurant with hard working staff and kitchen that delivers on their fresh tasting menu.

My friends and I went here for a school project and had a wonderful time! However, during our visit our paper caught on fire from the candle. Although, it was quickly put out when we poured our water glasses on it. We almost burnt the restaurant down and they were so nice about it. Even though some of the burnt remains of our papers got in our food, it was still delicious. The best yuca fries I have ever had!
