We brought some out-of-town guests here, which seems to be the law in Florida. The restaurant is inside DeLeon Springs State Park, so you have to pay park admission, which is $6 per car (up to 6 or 8 people, I forget). Park opens at 8am, restaurant at 9am. We arrived at 9:20 and were told it was a 90 minute wait. So we walked around the park and went on the nature trail to kill some time. Once they called us, the waitress explained how everything worked. The meal was fun, and there are 2 kinds of pancake batter, both of which were good. Sides such as bacon are priced separately from the all-you-can-eat pancakes. So, here is a tip - this building is really old, so there is NO air conditioning. Luckily, it was only about 70 degrees out when we went, so that wasn't a problem. If you sit down to eat at 11am in the middle of summer, you'll be sorry. When we left, the wait time was about 3 hours.

Eating at The Old Spanish Sugar Mill is much more than just a meal. It’s a real taste of Americana. Arrive with plenty of time to spare, as there’s always a wait line, even on quiet days. If you like pancakes then this is the place to go. Awesome place, awesome people!

A unique restaurant with do-it-yourself pancakes. The pancakes are delicious and cheap and you can also add berries, etc. for your pancakes as well as meats and eggs. Just be aware that the restaurant closes at 4:00 pm so be there by no later than 3:30 or so.

Located inside Ponce de Leone Springs State Park, this hidden gem has been serving this unique form of breakfast for decades . Arriving at noon we learned there was a 2 hour wait BUT we could swim, fish, kayak or take the nature cruise. We decided on the cruise. Returning we headed directly to the restaurant. We were immediately seated, and ordered the house specialty pancakes along with berries, pecan’s and bacon. I tried the old world first which were delicious with the nuts and berries. It had been decades since I last flipped a flapjack but the technic return fast making the entire experience remarkably gratifying! I rated this 5!

This is a place you go for the experience. With that in mind, you won't be disappointed.

They opened at 9 (we went on a Wednesday), we arrived at 10 and the wait was about 90 minutes (which was quite accurate). We spent the time looking at the (free) small history museum nearby which was quite interesting, and sitting on a bench by the Springs. Later we learned that if a short wait is important, best to arrive 30 minutes or so before opening to get in line.

The restaurant is moderately size and accommodates a fair number of people, but with everyone making their own pancakes, one at a time, it's a very leisurely breakfast. Great for relaxing.

Our server (shout out to Jonez) was great - attentive to be sure we had plenty of pancake batter and coffee; both are essential to a successful breakfast!

Quite a pleasant visit and a place I will definitely take my frequent visitors "from the north."
