Off the beaten path, a few miles off Hwy 25 about 20 minutes north of Colorado Springs is a little convenience store that serves a great barbecue meal, sure to satisfy the taste buds and the appetite. There's not much there, just a couple of tables inside, a couple more outside, and one picnic table in "the greenhouse"...this is nothing fancy. Stroll in wearing blue jeans and a t-shirt or shorts and flip-flops and order your choice of barbecued pulled pork, beef brisket, or chicken. But do it right and get the "Potato Bomb", a huge baked potato, nestled into a mound of barbecued beans, heaped with the barbecue meat of your choice (with a range of barbecue sauces from mild yet tasty all the way up to a full-on assault of habaneros), topped with sour cream, chopped pickles, and chopped onions. This is NOT for the faint of heart, but it is so tasty and so filling that you're going to look for an excuse to come back.
I had a beer, she had a soda, and the delightful young lady who runs the store and serves the food while the owner cooks brought it to us out in the greenhouse. Having eaten our fill, we handed her a twenty and got change back. Really?
Not fancy. Not elegant. Not "healthy eating". But so darned good.
