Just moved to the area so things were still in boxes. After a long day of unpacking we decided to try one of the little local places that was within walking distance. For a Monday night the day before the 4th of July the outside area was packed. The inside was pretty empty just because the weather was so nice. We decided to stay inside because they sat us at a booth which seemed to be a lot more comfortable and we were very tired.
Our server came over and brought us water and menus. We looked it over and decided to try the Limoncello Chicken Wings as an Antipasti and an Umbria Pizza Napoletana for dinner.
The wings are grilled and seasoned with a lemon sauce. They were very good, but you only get 6 for $10 so we thought that was a bit expensive for that number of wings.
The Umbria is made with fresh mozzarella, sweet Italian sausage, roasted red peppers, Vidalia onions, San Marzano tomato sauce and fresh basil. The pizzas they serve are Napoletana style and are cooked in wood fired ovens. They have also received certification from the Associazione Verace Pizza Napoletana. They are the only certified Neapolitan pizzeria in the sate of Colorado.
On the negative side it took a really long time to get our pizza. According to one of the servers they had a larger than expected crowd for the 3rd of July and things were running a bit slow. The two cooks seemed to been working hard, but maybe you can only have so many pizzas in the oven and do them right.
When the pizza arrived it was very tasty and we did eat the entire pizza. They only come in one size, but it was more than enough for the two of us.
I would definitely go back again but probably during a regular time when they would have a full staff.
