Apu is inside City of Dreams and advertises its food as authentic Filipino cuisine. I'm Filipino. So, I tried it. What I found is that its sauces and soups are not so flavorful. If that is authentic, then there's something wrong with Filipino food.
To be sure, the presentation was fantastic. We had the pork sinigang and fried Lapu-lapu in sweet and sour sauce. The meet of the pork just falls off the bone. Very tender. However, the one piece that did not have a bone in it turned out to be tough. Too bad. I was enjoying it until that point. The soup was not as sour, which is okay for me, but it was not the sinigang I am used to. It lacked oomph. Maybe the recipe is one from a spot in the Philippines that I am not familiar with. Anyhow, the toughness of that last piece kinda ruined it.
The fish was good. The sauce was light. There just wasn't enough of it. Still, it wasn't bad. Just lacking.
And that's where the problem lies. At the price we paid for it - and it is very pricey - we were expecting so much more.
