Chuy' has been around forever and has been a favorite of mine since my first visit in 1995. I love their complimentary chips and salsa bar, although one risks being full by the time the food comes out! Their Mexican martinis are the best in town, give one a try! I often order the southwestern enchiladas, which are stacked and made with blue corn tortillas, I always get them with a side of hatch chile sauce.
