Owner description: Thuan Tinh Island is a small isolated island, around 3.5 km far from Hoi An Ancient Town, on Thu Bon River. Thuan Tinh Island is an eco-friendly island rich in tropical foliage making it a beautiful place to cook, relax and then enjoy the dishes you've created, Thuan Tinh Island Cooking Tour. We organize daily cooking classes at Thuan Tinh Island: pick-up at the hotels in Hoi An area. You will make your first stop at the market to purchase some fresh and locally grown herbs, before joining a river boat ride in 30 minutes to Thuan Tinh for a relaxing meander through what has been officially recognised as an ecological zone. To visit the local Village, we take a row boat ride through the water coconut trees. We then walk through the gardens to visit a local family and snack on grilled rice cakes and iced tea. From there, we head back to our open-air cooking class overlooking the water coconut trees and river. Our chefs will show you how to make Vietnamese food while you enjoy the cool breeze and peaceful setting. That is much more than simply a cooking class as a journey to discover the eco island that makes you satisfied.

The first stop was the local market to buy the ingredients for lunch. Everything was fresh and beautiful. We got an assortment of herbs, meat, shrimp (2 sizes), mushrooms and other necessities. I tried a raw silkworm, which tasted interesting. After shopping, we got into a boat for a ride down the Thu Bon river to our island destination. There were eight of us in all, 2 pairs of young Germans, 2 brits about our age and us. Our guide and teacher was a young woman, Trang. She spoke impeccable English and was a good teacher with a sense of humor. Six of the people were vegetarians, yet Trang was able to adapt to their needs,

Our first dish we made was broth for pho. Since we had limited time, we did an abbreviated version but it was still delicious. Trang also showed how to make a vegetarian version using a root vegetable stock.

The next dish was spring rolls with shrimp, pork and veggies. This was fun to wrap and eat, with the accompanying peanut/hoisin sauce.

The next was Banh Xeo. I loved making the rice batter and cooking it like a pancake. We wrapped it in rice paper and herbs. Dipping sauce was fish sauce, chili and garlic.

We then made a wonderful noodle salad with sautéed beef and crispy garlic and shallots. She showed us how to do an artistic presentation on the plate and also how to flame the beef to make it tastier.

We finally finished with our pho, which was served Hanoi style with the veggies put in the bowl before the broth. All dishes with excellent and the other group members were all very nice. Trang was excellent.

Hon has been your chief & mentor for 6 hours of fabulous discovery of the Vietnamese food.
We went in the local market to buy the raw we have cooked then. This was pleasant to have such an expert to get more knowledge about the food & uses in a traditional market.
Next, we have cooked 4 traditionnal dishes (then eat :) : phô, bun bo, spring rool & banh xeo. It was really interesting, we a small group and a passionate cooker (Hon).

What a fabulous morning in Hoi An. From the market to the boat ride to the excellent support in the cooking class. The dishes were great and very easy to learn. Excellent, fresh produce used and great instruction to get the best flavor from them. We thoroughly enjoyed the whole morning.

We booked this activity through our hotel the day before and were pleasantly surprised by how much we enjoyed the experience with Hon.

The day began with pick up from our hotel and then a trip through the market to purchase ingredients for our day. Although the groups are capped in terms of size, it was still difficult in our group of 9 to stay together and to hear our chef's explanation. Nonetheless, it was very cool to see the market and learn a bit about local ingredients. I would recommend wearing closed toed shoes to keep your feet clean and protected for this part of the day.

We then took a boat ride from the market to the island and transferred to smaller rowed boats for the last few minutes. Although this portion is not strictly necessary (the return at the end of the day was via car and much quicker), we thought it was fun to be out on the water and try something new.

The actual cooking portion of the class was wonderful. We made four dishes, watching Chef Hon's demonstration first and then being able to cook ourselves at individual stations. It felt like there was a perfect balance between being able to cook yourself and have the components prepared in advanced for you (i.e. you didn't waste time on prep but still got to do all the important portions yourself). Each dish was absolutely delicious, and we left extremely full. We loved that the recipes were provided to us at the end of the class to try at home!

We appreciated all of the thoughtful touches (such as a glass of passion fruit for each participant that was constantly re-filled) and cannot recommend highly enough! Consider doing the morning time slot so that you're able to get the freshest produce from the market and escape the worst of the heat.

Did the class solo as hubby not interested in cooking. Pickup, local market tour, boat ride to school all went smoothly. Our chef was Hien, and she was fantastic! The instructions were excellent, prep work done in advance for you was flawless, the unlimited passion fruit juice was the best, and all my dishes came out beautiful and delicious! Wanted a class where I would learn to cook food that I liked and would be easy to prepare at home, and the class delivered on both! Was able to customize your food to account for your level of spice (mine is not spicy at all) and herb preferences (I do not like cilantro). It was a great class, door to door pick up/drop off. LOVED IT! Thank you Hien!
