Having just returned from a 10-day honeymoon at Le Meridien I can thoroughly recommend this hotel for any type of traveller. I'm a big fan of Egypt and was looking for something less crowded than Sharm but with more to offer than Taba Heights. Dahab hits the spot perfectly and we would definitely come back given the chance.
We went for the deluxe seaview room which was perfect. The whole place has a nice ambience and they make use of oriental scent like cedarwood as well as visual elements. Without getting too hung up on costs as the hotel is generally good value: just don't pay for Wifi - check your emails etc in the vast, comfy reception area. Poseidon Divers were friendly and efficient; their day long boat trip to snorkel and dive at Gabr el Bint was excellent. They also lend you free snorkel gear for the week if you book this trip for 2. The house reef was one of the best I've seen in the Red Sea, keep an eye out for a big blue triggerfish and and monster-size Moray eel living in a small coral island near the southern edge of the hotel. My husband yelled out and did a u-turn. The beach massage guy is highly recommended if you're stiff from travel or diving, I got a 1hr 20 min massage, for €55.

The breakfast buffet at Sea Breeze was excellent with the best coffee I've had in Egypt. Beach Bar salads and seafood were tasty (if slightly patchy service) and if you fancy a night chilling out at the hotel the room service is also great: really quick and good value. Egyptian dishes are very good particularly the spicy lentil soup. The rest of the time we ate in Dahab town where we would recommend Friends (for Egyptian food), The Kitchen (for thai) and Sea Pride (for fish).
Dahab Safari tours were good - we tried the St Catherine's Monastery and the camel safari.
Staff and locals were extremely friendly and always wished us welcome. A polite 'la, shokran' if you don't need their services will avoid any fuss.
As a winter retreat this place is on my top three all time recommendations.

Room Tip: Deluxe seaview is worth the extra money, scout around online for a deal

We had another fabulous holiday at the Meridien. My only problem was with the air-conditioning: to me it sounded like I was sleeping next to a jumbo jet engine. Our room was very kindly changed and up-graded, but to be honest the noise was almost the same for me. I must admit that I am sensitive to noise; but in this lovely room even my husband was suffering from the effects of the air conditioning after a while. I'm not sure if the air-conditioning units need up-grading or something, but we certainly shall be restricting our stays to Christmas when we don't need to use it apart from heating, until this is resolved. That rather big niggle aside, we had a lovely time.
We did not try the food at the hotel apart from room service, (Steak sandwich fantastic, bedouin grill nice and smoked salmon sandwich good. The main problem seems to be consistency. Whoevever makes the steak sandwich has it down to a T, but everything else is so hit and miss. This is quite annoying, as you order something you expect and often get something else quality wise.
I spoke to an Italian lady who said the Italian buffet was a disgrace, but the Bedouin grill was very good.
I would eat at the hotel if I thought I would get consistently good food, but the 'hit and miss' aspect is irritating.
While we were there there was an Art exhibition which we thoroughly enjoyed.
The beach staff were superb, as ever.

A beautifully architecturally designed and tasteful hotel in spacious surroundings with lovely swimming pools and private beach and lots of sun beds. There was no problem getting umbrellas or sunbeds and the service on the beach was attentive without being invasive. Rooms are spacious, clean and pleasing. I felt pampered by treating myself to a few excellent massages. The staff are very friendly and helpful. The only downside was the very bland, unexciting food but we took the shuttle bus to Dahab where we ate fantastic fresh fish. I have been here twice and would go again for some winter sun. Book a taxi from the airport because tour companies stop and lots of different resorts. Taxi cost the same as two people on a shuttle from UK tour company.

We stayed at Le Meridien Dahab Resort for one week, in the week of 17 April. We had never been in Egypt before, but the weather anywhere in Europe was not what we were looking for. We had an excellent, relaxed and very comfortable stay at the hotel. The food was quite good, rooms clean and staff very friendly. We are seriously considering returning to this hotel next year, and we would recommend this hotel to anyone.

I left cold Norway with some friends and stayed one week at Le Meridien Dahab 17-25th of march 2012.
The hotel is quite wonderful, and has a architecture that is delightfully laidback and works good with the surrounding nature.

The food we ate was quite good, in exception of one dish the first night at Vie Restaurant, but next time we ate there the food was very good. The rest of the meals was absolutely acceptable.
The breakfast buffet was not huge, but always very good and tasty. I recommend everyone to get up in the mornings and eat breakfast at the buffet (Sea Breeze restaurant)

The service at the hotel is professional and efficient. Most of them was also smiling and nice.

I stayed in a sea view room. The room was very nice, and the outdoor shower was a sweet way to wake up in the mornings. The outdoor sitting area in the seaview room had a nice view, but not so private. People passed on the track next by the terrace, so thats a matter of taste.

A friend had a normal room without seaview, the view was not so nice there, but the terrace was more private. Also those rooms are almost identical to the deluxe rooms and are also very nice.

Beverage prices were quite good for a five star hotel. A 0,5 beer costed 30L.E in the restaurants. This is nothing compared to what I payed at 5 star in Sharm two years ago (Ritz-Carlton) Food and beverage is also much cheaper in Dahab than in Sharm el Sheikh.

The beach is nice, and there were plenty of areas to sit and enough sunbeds. The hotel was not fully booked though.

The house reef is nice, it does not have sudden reef drops, so you do not jump from a jetty here on the outside of the reef. You simply walk by steps into the water which is also family friendly and nice for beginners that want to try snorkeling and scuba.
The reef is a lagoon type with sandy bottom, and the corals are on rocky islands and small walls. A big stingray, emperor angelfishes, big sohal surgeonfishes and nice butteflyfishes are examples of what I caught on my UW camera.
The corals are nice, but not as nice as the wonderful "Blue Hole" in Dahab.
Absolutely a decent house reef.
