I just recently completed a 4-night stay at the Park Hyatt Dubai.
Starting with the good: recent renovations have made this property absolutely gorgeous. The rooms are spacious and well-appointed, the grounds are extensive and breathtaking, and the new lagoon is a wonderful place to relax and watch the Dubai Skyline. The grounds have multiple restaurants, and the food was great at each of them.
However, where expectations fell short was with the service. Park Hyatt is a luxury brand, and I set my expectations at it being similar to an Intercontinental, Ritz-Carlton, or St. Regis hotel. The service at this hotel felt more like a mid-tier chain like Hyatt Regency or Sheraton; in fact, I've had far better service experiences at both the Grand Sheraton Dubai and the Hyatt Regency on the Dubai Creek.
Let me be clear that very little is truly /bad/ at the Park Hyatt Dubai, but none of my service experiences felt like a well-trained top-tier establishment. It seems breakfast is frequently understaffed, as servers can take very long times to come take your orders, and frequently get orders wrong and bring you an incorrect order. The staff at dinner one evening were extraordinarily unprofessional and throughout the evening tried to get me to order more food and alcohol than I cared to; he definitely pushed the boundaries from making recommendations to being pushy and obnoxious.
The staff at the lagoon were extraordinarily slow and lackadaisical; everything took a /very/ long time. I ordered a drink and chips and it took nearly 45 minutes to come back, and I watched as other guests asked for help moving their umbrella and the staff came back 20 minutes later to help.
I even contacted the Guest Services about my poor experiences, in an effort to bring it to their attention (I was feeling pretty disappointed). Guest Services never got back to me, even though I was at the hotel for 3 days after my initial series of unfortunate experiences. This only reinforces the image that service problems are training issues and hotel-wide.
I'm very disappointed with the service here, as the hard product at the hotel is amazing, and the Park Hyatt chain is supposed to be a true luxury brand. But the Park Hyatt Dubai does not live up to those expectations, and especially for the price, you can probably find a better experience at any number of nearby hotels and resorts in Dubai.
