I had lunch in Caprice with my partner on a saturday afternoon.
They had booked a table near the windows for us, which was super for our experience.
We started our Caprice journey with squeezed orange juices and then spent at least 30 min to make our choice from the menu.
We hesitated between the set lunch and a la carte. Since we wanted to discover Caprice food at its best, we finally opted for a la carte (and never regreted!).
With kind help and suggestions from Sébastien, we composed our menu and couldn't wait to start our journey.
First came a basket of bread, from which we could choose different kinds, all excellent, to be combined with fresh butter and olive oil (Château d'Estoublon).
The amuse-bouche was "Chestnut Soup with Parma Ham and Crispy Aged Parmesan". The association of chestnut with parma ham was superb. The flavour, just salted perfectly, was fantastic, and we were already in heaven before the meal actually starts.
We were offered to have our starters split in 2 semi-portions, so that we both could enjoy each fully. It was really like having 2 starters each.
The 1st one was "Langoustine Ravioli with Veal Sweetbreads, Chanterelle Mushrooms and Delicate Shellfish Sauce", which is a signature dish of Caprice.
OMG!!! This is the best thing I've ever tried in my life. I can't describe the sensation of tasting the shellfish sauce. This only could justify the Michelin 3 stars. Incredible.
This dish is perfect, nothing else to say. The langoustine is so fresh and huge. I've seen similar raviolis in other restaurants, but nothing can compare with the Caprice creation.
The 2nd starter was "Canadian Snow Crab Gourmand with Mango Mousse, Tomato Rougail and Fresh Herb Shoots", which my partner loved so much.
The crab was also incredibly fresh and the marriage with mango mousse amazing.
We chose a Riesling white wine to drink with the starters.
My partner would revisit Caprice just for them :)
Then came the main courses.
We had "Milk-Fed Veal de Corrèze with Creamy Girolle Lasagne, Pommery Mustard Faisselle and Sherry Vinegar" and "Challans Duck Fillet Cuit au Plat with Buttered Savoy Cabbage and Parmentier in Braised Jus".
Still shocked by the perfection of our starters, we savoured the meats with delectation.
What to say, except again that the main ingredients were incredibly fresh and tender, cooked to perfection.
The duck was both in the plate and in hachis parmentier, which is so great.
Mashed potatoes are like Joël Robuchon's special, buttery and sweet like in a dream.
We chose a Nuit Saint-Georges red wine to drink with the main courses.
By that time we were already full and were handed the menu for dessert choice.
We chose a cute one made of pineapple confit, biscuits, ice cream and meringue. As cute as delicious. But this one couldn't be split in 2 haha!
We finished our journey with tea and mignardises (chocolate and macaron).
Because we finished quite late (nearly 4pm), Sébastien did a quick tour of the restaurant for us, from the private dining room to the impressive wine and cheese cellar, where it is also possible to have private dinner for regulars;
Overall an unforgettable meal. I'm French and I'd never had experienced such a high level of cuisine in France.
I've also tried top cantonese and chinese restaurants in HK. No matter what their quality is, they can't provide similar emotions and feeling of heaven. You don't remember the taste still after 1 month.
Caprice is definitely N1 of N1 in Hong Kong!!!
