Description: "Il Covo".... the restaurant of traditions, the place where we maintain, conserve and reintroduce the recipes of my great-grand mother, the genuineness of the used products, the love for cooking, following to the ancient recipes to offer the real flavours of our family's cooking Eating at Covo means eating meals prepared with local ingredients, with fresh and seasonal vegetables. Our pasta is handmade, our dishes are made to order, to ensure freshness and genuineness. We add our phantasy, our creative touch to the tradition, creating faithful dishes to our recipes but with a touch of originality. The "Ristorante Il Covo" is: homemade pasta, fresh vegetables soups in according with the seasons, grilled T-bone steaks, thinly slice of grilled steak meat, filet steaks, which are barbecued..., and then, our tasty wild boar and our seafood recipes' selection which the chef propose with intense passion and great success. Finally our pizza, which is baked with a natural 24h-long rising, in order to become highly digestible, crisp and light. In fact Il Covo is a wine bar also, and offers a wide wineries brand's selections presents in our territory prosperous of excellences The "Ristorante Il Covo" is the haunt for people who know how to eat well and for everybody who wants to continue to do it with a glass of good wine in the hand.

Great restaurant. Staff very friendly and helpful. The restaurant offers Tuscan specialities and various types of pizza. Large selection of wines. Prices are affordable for everyone. We recommend it.

We had found il Covo on TA before we left the states and thought we might eat there one night to get out of the old city and maybe try a place more locals would eat. Il Covo is located perhaps a five minute drive from the Fortezza. We made reservations for a Friday evening, 1/2 hour after opening, but they were obviously not necessary - we were the only people in the place and it remained essentially empty the entire time we were there.

The online menu listed ribolita soup, but they did not offer it the evening we were there. Service was good, nothing special, but not bad by any means. The food was good, but then again nothing outstanding. Had we to do it over again, we would have stayed within the city walls and eaten in one of the old town restaurants.

We had an amazingly delicious dinner at Il Covo. From the outside we were not sure it would be special but it was recommended by our hotel and it was one of our best meals in Italy ! The local Brunello wine was also fantastico!!

Ate here 2 nights in a row:)) We were hungry and walking back to our room, saw this place and gave it a try. We were there 5 minutes prior to opening, but they sat us, told us it would be a few minutes before the kitchen was ready. We stood and watch the chef (or assistant) finish stuffing the ravioli by hand and making the pasta. They got our drink order quickly. The service was personal, they answered our questions about the menu, which was traditional Italian type. Appetizer first, then pasta dish, meat dish, vegetables. The bread was awesome. We had the brushetta, eggplant, Tuscan meat sauce on pasta, Wild Boar, Beef Sirloin strips, roasted potatoes, broccoli. It was all extremely delicious and we had no complaints. The service was not slow, I felt the timing for each dish was just right. It took us 1 1/2 hours from the minute we stepped inside to the minute we walked out. Not bad on Italian schedule. Excellent wine choices also. The prices were average. Our bill was 65 Euro. We had a bottle of wine, no dessert.
The next night we chose to eat here again, getting here 20 minutes prior to opening. We sat in the bar area, had a glass of wine while we watched them prepare pasta for the evening. It seemed like more locals ate here as the workers/owners appeared to know most of the clients. The restaurant has a warm quite feeling. Not loud, very relaxing. I actually had to look around to see there were other people in there, and there was lots. One table next to us had the pizza, which looked awesome. they ate it all so I assume it was.
Give this place a try, you will not be disappointed.

Very friendly staff, tasty pizza, good choice of wines and also fair prices. We were looking for a quite spot and we found this little gem, we recommend it.
