I really love the way how the Danish works. Introduced cycling way back to avoid congestion in the city. Sustainable solutions are seen everything.

Let's not talk about the food first, it is the mindset that is important. The outcome of the cuisine is far from ordinary. In fact, some of the dishes are quite remarkable. I wish that the explanation on the food preparation could have been more detailly illustrated. Definitely a worthwhile educational food journey!

First, we arrived to the location which is slightly out of town in enough daylight to see the garden in the back. Our waiter was Scottish and a lot of fun and did an wonderful job with us and the wine selections for us throughout the meal. He also had some homemade snapps my husband enjoyed. We had the potato reconfigured bread which was delicious looked like a puff cracker and tasted divine. The tomatoes with tomatoes oil and they had two in my dish but it was nice to be reminded what a real tomato should taste like, they were exquisite. A side of the potato bread with seeds.
Reduced corn broth dish, the Mackerel , a celery root dish that tasted like lobster...
each dish was just wonderful.

I am not doing these dishes justice because this was after a long trip and i was in the moment savoring the flavors, rather than taking copious notes. Nothing felt rushed or too slow, just perfect. We met the chef Matt Orlando briefly at the end and thanked him for a stunning meal. He gave us some suggestions for our remaining meals. I can't begin to understand how Michelin stars work, but the fact this place doesn't have one is absurd. Is it a lack of white tablecloths and fussy decor? This place deserves one. Thank you for living up to my excitement in going here, and giving us a wonderful memory of a fantastic meal and experience.

We had the 9 course option. As vegetarians we were a bit skeptical to what we might get. We were pleasantly surprised. All of the dishes were very tasty and interesting combination of ingredients. We went for lunch and liked that it is also a casual place.

As a tradition we go out with friends to have a luxury dinner at least once a year. This was definitely one of the best experiences in terms of food service and wine pairing.
Welcomed very friendly and you really feel welcome. Not just usual politeness. Staff was great at sens8ng the mood and contributed greatly to make this an unforgettable evening.
We had the large 9 course menu with wine. Portions are just right in size, not huge but enough to really be able to taste. Wines could be surprising but all worked great with the food.
Food was generally dishes never tried before so genuine original kitchen.

This place is the pinnacle of pretentious, expensive nonsense.

It’s located in a warehouse in an industrial park that requires a cab ride from the city center.

First of 6 courses was 6 peeled cherry tomatoes nestled in hay. “Don’t eat the hay.” We were told. So we ate the tomatoes. The bread wasn’t cooked through but was described in excruciating detail by our waiter. I had non alcoholic apple juice which was overpriced and underwhelming. The ingredients for most part were cheap cuts or products, lamb heart, chicken thigh, coffee grounds, beets, tomatoes presented in a way, it is argued that is “sustainable.” Whatever that means in this context. Every once in a while there would be a yell of “yes, chef” from the kitchen. I was told the wines paired were mediocre.

This place is clearly a foodie thing but it’s really a farce. They take items that would otherwise be thrown out - potato skins and work excruciatingly hard to create something with a unique- but not necessarily good, taste. And charge an exorbitant price for the privilege of the dining experience. Skip it.
