We had a delightful evening, meeting new people, enjoying the food, and experience of how it was served. A man shouted at a window when a new dish was being served. Couldn't understand what he was saying, but figured out you had to get in line to pick up the food. After dinner, we enjoyed a concert on the stage. A unique experience and worth
a visit.

Although I have traveled to Florence many times over the years, coming to the Teatro dell Sale was a totally unexpected delight. First, we had made reservation there, for we wanted to see a particular musical program. When we arrived at the theater, we still did not know what to expect. We did not know about the dinner that came before the show.
At 7:30, we entered the dining room, and found places at a table with other diners. When it was announced that food was being served, everyone got up and proceeded to a table that was filled with different types of cooked vegetables, salads made with different grains, probably about 10 different items. This was buffet style, so one simply took what one wanted, then went back to your place and consumed that. Then, when the next course was to be served, the chef stuck his head out of the window of the kitchen and loudly announced the dish to be served. People swarmed toward the buffet table. I think there was supposed to be a line, but to me, it resembled the action in an aquarium when food pellets are dropped to the fish: literally, I had to push my way (gently, of course) to get to the table. This happened over and over again, for over one and a half hours. The food was excellent. It was prepared in the kitchens of Cibreo ristorante, which has a very good reputation for making fresh food, from known and local sources. After the initial appetizer, we had some sort of meatball in sauce, mussels with just a touch of lemon juice and white wine, clams in a spicy broth, a local pasta dish in red sauce, finishing the main meal with chicken that had roasted on a rotisserie all that time, with a wood fire banked behind the chickens. These were served with roasted potatoes. All this time, we could watch the action in the kitchen. One young lady chef produced many pans of the thin, salt-covered bread that was cut into strips. These were always devoured immediately. The place was packed with Italians, not just tourists, for one young Italian man sitting at our table said this was the best food, and the price was certainly reasonable. For one person, it cost 37 Euro, for the dinner, the show and the mandatory 7 euro to join the theater guild for one year.
When dinner was finished, all the chairs were arranged in a theater-like position, facing the stage. The show was about one hour. Oh, yes, all during the meal, all the wine, coffee , water was free. You just had to help yourself. We enjoyed it so much, and we were happy that we had already made reservations for the following night, for the musical program. I highly recommend this as a special treat. There is some program every night that they are open, which is Tuesday through Saturday.

Like other reviewers, I experienced some pushing to get to the food, but I wasn't surprised as Italians and French don't know what a line is. The cold salads were impressive - couscous, potato salad, lentils and at least 5 more. All the red wine and water you can drink (as long as it lasts). Main courses included oysters, mussels, veal meatballs, and roast chicken among others. Well worth the 35 euros. Minuscule brownies for dessert were the only disappointment with the food.
We appreciated the fact that the manager came around to the 10 or so of us anglophones and explained what the chef was yelling out the window as the next course. The crowd was 90% Italian. Unfortunately for us, the show was 95% in Italian. A stand-up comedy act. The Italians in the audience were laughing the entire time, so I assume it was funny. The manager told the anglophones to sit in the back during the show so that if we left we wouldn't disturb anyone. We lasted about 40 minutes, but being stuffed with wine and food, and not understanding the Italian, we finally headed out.
Check what the act is before reserving a space. I would have loved the jazz combo that another reviewer mentioned. If they tell you the show will be spoken in Italian you may wish to choose another night to attend if you don't speak Italian.
I agree with the one reviewer who suggests you sit near the food during the dinner. Just not too close as everyone will be crowding around for a plate.

The Teatro del Sale was listed on several youtube video blogs on a "must see" list of things to do in Florence. As the restaurant was near our hotel (Plaza Lucchesi) we decided to give it a try. We arrived approx 30 minutes prior to dinner and paid the "membership fee" to join the theater, which included dinner. We enjoyed sitting by an open kitchen and watching the food preparation. The venue is a beautiful old theater, and the food is served over several courses, with the cook poking his head out of the kitchen and announcing what you were eating. The food was excellent, with several local and regional dishes. After dinner, all of the seats are brought to the front of the theater by the stage, and we enjoyed a violinist and accordionist performing several songs. It was a very unique way to experience Florence, and I will definitely use my Teatro del Sale membership again the next time I return.

This was a interesting addition to our holiday and an enjoyable way to spend an evening. The music afterwards (a gypsy music duo) was fantastic and the food was tasty and rustic.
