Our hotel gave us a few options for nearby restaurants and we are so happy we decided on Osteria dello Zingaro. It was down a somewhat deserted street behind the Duomo and was packed with locals (we were lucky to get in and were very obviously the only tourists which we loved!) The front part of the restaurant was also a salumeria where they sliced and prepared our appetizer of Culatello, Proscuitto.and Parmigiano Reggiano. We then worked up the courage to try the local favorite of "Pesto di Cavallo" (horse meat tartare). Didn't taste like anything we've had before; actually very good - this was the place to try it. The local pasta special was also fabulous - an unexpectedly great dinner! Would definitely return and recommend.
