After taking a walk around Vatican City, we ended up at this small pasta joint considered fast food pasta. They offer about 6 different flavors with different types of handmade pasta. It is a small place but having the kitchen in the open gives a nice opportunity to see how they make the pasta and put the sauces together quickly. We sat outside on the curb as there was not enough room inside, but it was fine! We ordered 3 different pastas and the sauces were amazing! The pasta is very “a la dente” so if you are used to cooking your pasta a bit more, you find this one a little hard. The only other thing that I would suggest they change due to our current ecological issues is that they reuse the plastic dishware they give you. They are not the normal disposable plastic/paper dishware, but a thicker plastic that can easily be washed and reused. The bin outside had piles and piles of bowls.
