One year and a half since it opened and it has become my landmark restaurant in Madrid. Every other time I go down town, I try to savor the delis served in Sr.Ito
The food is simply fascinating, all kind of flavor combinations imploding in your mouth the "japo-burrito", the sausage and béarnaise sauce gyozas, and their nigiris, eel with foie, butter fish with miso sauce or flambé salmon with citrus are a must, simply dilicious.
And on top of that, a cozy and friendly atmosphere that you will want to repeat again as soon as you step out of Sr.Ito.
Every time a newcomer arrives in Madrid, I take him/her there, since Sr.Ito never lets you down.
If I had to describe the kind of food, that would be a Japanese based restaurant with a Spanish touch, but also French, Peruvian and Thai, which makes it a perfect combo.
It is true, that sometimes on weekends it is full on and reservations early in the week are the only way to get a table, but on week days it is not so hectic and meanwhile you are tasting exquisite dishes, you can better enjoy the friendly stuff.
Unfortunately despite obvious effort and reasonable service there is no escaping the fact that they have failed to understand the aesthetics of Japanese cuisine. I don't think they understand the basic qualities and style required to cook Japanese food and as a result the quality of the food is really very poor. I would even go as far as to say it is disrespectful to proper Japanese cooks to call this restaurant a Japanese restaurant.
It's a shame but my advice would be , avoid this if you like Japanese cooking. If you like style over substance and food that does not work or taste right then this is a place for you.
I suggest they find a new cook as soon as possible.

Por otra parte , estamos súper agradecidos a nuestro equipo de cocina por permitirnos con su trabajo disfrutar de gratas conversaciones con nuestros clientes , y más agradecidos aún al trabajo de nuestro chef Sergio Monterde por la dedicación y la diferencia que transmite a sus creaciones , no tenemos ningún interés en cambiarlo . It was our first night here but it was an incredible surprise. It is not a traditional Japanese restaurant but they achieved the best possible flavors by mixing Japanese Spanish and different spicy and regular sauces.
The price is reasonable and the service one of the best I had in the last months. I will always remember Paula who suggested a perfect set of dishes for our dinner
Visited when standing #3 in Madrid Japanese ranking.
The place is very charming in the heart of Chueca, seat around 20 upstairs. Found the same number of locals than foreigners due to the Tripadvisor bias.
The complimentary appetizer was seasoned seaweed, very good.
Next was sushi: sashimi moriawase, very well cut, good quality and properly kept fresh with a bed of ice, nice!
Next nigiri: too sophisticated for my taste but good whatsoever. Uramaki very good.
Service was excellent. The bill was on the expensive side but cmon what did you expect?
Overall, having already been to #1 and #2, 5/5 but beware this ain't no old school sushi, it is creative sushi!
