Amelia was a fabulous teacher and we learned to make excellent paella, Spanish omelet, pa am tomaquet, gazpacho and crema catalana. She engaged each of the students and took us to the market and talked about the fish and seafood would work best in the paella. Then we chopped the vegetables and sautéed the sofrito and fried the potatoes and pureed the gazpacho and flambeed the crema catalana. Excellent!!!
