My husband and I visited early on a Saturday evening (around 17:30) and we didn't have a reservation. There were many guests, but the restaurant is large, so there were still plenty of tables available.
We were craving sushi, so we skipped through the menu until we got to the sushi pages. However, they also have a full Vietnamese menu and I definitely saw some Thai dishes at tables around us (curries and various Thai noodles). Thus, it's a good place to go if you are with people who crave different Asian cuisines.
Sushi was good and price wasn't too steep. My husband's favorite was the Tiger Eye, which are two big sashimi "rolls" (rolls without the rice).
The only disappointment was the mini tuna spicy roll because the tuna was canned. The other rolls had fresh tuna. Canned tuna has no place in sushi.
All in all, we would go again if we were craving sushi while in Freiburg.
