We found this lovely restaurant by accident on our way back to Carcassonne from a day out exploring the area. We were hungry so took a chance and stopped. And we were so very glad we did ! What a find ! The chap who runs it is lovely - happy, accommodating and just a really nice guy. He helped us with the menu, and we had the trout, which had been caught that day nearby. It was absolutely delicious ! As was our big salad starters with duck. The desserts were gorgeous too. You can't go wrong here - if you find yourself in the area, you must eat here !

Just outside Axat is Le Rebenty, a very warm and friendly little restaurant that cares passionately about the food it serves. The owner makes you feel very welcome throughout the experience and it is clear he is proud of the food he serves. From the aperitif of Blanquette to the final espresso we were fed well. My starter of cassoulet de fruit de mer was divine followed by the trout which is a very local speciality, sourced from the river across the road from the restaurant, I had mine with a Buerre Blanc. The only criticism of the meal were the vegetables, a bit random, boiled and flavourless along with the salad with tinned sweet corn - strange to my English palette (and the chairs were a tad un comfy- but now
cheese served next was amazing and then the piece de resistance - the raspberry pannacotta was out of this world and the Brazilian tart that I had was delicious with a sort of set custard and cream in a pastry case. What a lovely French experience.

We have been visiting Le Rebenty for over 10 years, and we are always delighted with the warm and friendly atmosphere and service which is first class. The food is relaxed and very classic, with their own twist and beautifully presented. Would recommend to all.

We had Sunday lunch here and it was first class. Nice bottle of Belgian beer to start followed by an excellent trout. The owner and his wife and their entire team were very welcoming it was an altogether fabulous experience. Don't think twice about it get it booked you will not be disappointed.

Travelling towards Le Tresor in Sonnac-sur-l`Hers we found this little place in the mountains, Le Rebenty, owned by a Belgium couple, very small but filled outside, we went inside it was very hot.
Their specialty was trout or Truitte, so we ordered Perrier, Local White and oven baked Trout, a very nice fish dish with vegetables and perfumed with herbs served with home made frites.
A nice stopover if you get near by.
