Description: Salsabor Prehispanic Delicatessen is a unique cultural space that teaches people Indigenous values thru food and art. Chef Alfonso Lopez De Anda, a Mexican proud of his Zapotec roots, specializes in New Indigenous Cuisine. He believes that you must "feel & taste the culture" before you can enjoy it. His signature dishes are Moles, The Tlayuda a type of Prehispanic Pizza, & many other Indigenous cuisine ranging from Mayan, Zapotec, Aztec, Otomi, Peru and many other regions from the Americas. Many of his dishes take 3 days to make, utilizing Indigenous methods like the comal, clay pots, molcajetes, mesquite wood, giving a warm rustic flavor to all his dishes. There is a comic book art gallery next door to the restaurant where you can enjoy San Miguel de Allende's 1st comic book called Niñají , run by international cartoon artist Isis Rodriguez who's the creator and his partner. Tours of his humble kitchen, catering, & classes on "Primal Cooking" are available by appointment on Mondays & Tuesdays from 10am to 4pm. Isis Rodriguez is available to meet in person, give tours of her works, & sign comics from 2pm to 6pm Thurs-Sat. Art classes in "The Anatomy of the Cartoon" can be done by appointment.

The food here is astonishingly good and good for you! Mostly gluten-free and lactose-free, with plenty of vegan options, you will never miss what's "missing". Chef Alfonso is a culinary genius, trained in Europe, with roots in Oaxaca. Your taste buds will sing, your body will feel marvelous, and your spirits will soar when you eat at Alfonso's Salsabor. I brought a group of friends here for dinner and we all loved the food (and the chef) so much we signed up for his next cooking class. This is not just another Mexican restaurant or cooking class. And by the way, according to my chef friends in Mexico, the diet of indigenous pre-Hispanic Mexicans was predominantly vegetarian/vegan. Alfonso has turned it into an art form.

You will get a special meal at this chef owned restaurant. Chef Alfonso Lopez de Anda combines family and indigenous Oaxacan recipes. We had the special chicken soup of the day, a chicken mole dish, a Oaxacan "pizza", a rich and tender beef dish and a special dessert.

NOTE: The restaurant has moved. It is NOT on Callejon Del Palmer. The correct address is Salida a Celaya 26, 37700 San Miguel de Allende, Gto., Mexico

I was hoping for an authentic indigenous food experience in San Miguel de Allende and fortunately came across reviews for Salsabor Prehispanic Delicatessen. The “delicatessen” is a casual restaurant, once-a-week cooking school, and catering business run by chef Alfonso López de Anda. The food he creates reflects his Oaxacan heritage and European culinary training, delivering bright, “updated” prehispanic dishes. Try anything on his short menu and you will be impressed with the subtle complexity of his moles, adobos, tlayudas, soups, salsas, and even an outrageous biznaga cactus coconut-milk ice cream. If you have a chance, take the cooking class: four companionable hours of informative, hands-on participation with a great meal at the end! Salsabor, which had been in a tiny space in el Centro, has moved to a relatively new location about a 15-minute walk from Jardin Allende or a quick cab ride. It’s well worth the trip.

We love this place and bring friends here whenever we can. This is prehispanic soul food. Ancient recipes with the freshest healthiest ingredients. Chef Alfonzo is moving soon, I think to colonia San Antonio so watch for new address!

This restaurant just happened to be around the corner from our hotel. We took note of the menu as we were walking by and decided to go in later that evening. The owner was very gracious and answered our questions about some of his featured dishes. He expressed concern about the quality of ingredients and about upholding the regional culinary traditions. He has something like 13 years experience cooking in Florence, Italy. Anyway, the meal exceeded all of our expectations. We savored each dish; flavorful w/o being over the top. The place is very small with just a few tables but this is one you don't want to miss. Excellent traditional dishes prepared by a real pro.
