Hi, will be staying nearby and want to see the backwaters, what's the best way? To see the more authentic side. Have either 1 or 2 days. Any recommended operators? Thanks

You should try the government ferry boats that connects different places, used by locals and also kayaking in the backwaters/ mangrove forests
