Although its winter in Mauritius its still very warm and can also get rather hot. Even in cloudy days it can be very warm although you might get sporadic rain, usually in the morning.
The north and west are good areas to stay.
Yes July would be fine if you stay on the north, north west or west coasts and avoid the east and south at that time. The prevailing south easterly trade winds blow their hardest then and can lower the temperatures on some days.
July is one of the coolest months but take a look at this link which gives average weather conditions for July:
One advantage of going then is its not too hot and humid as it is in summer.
Its still warm enough to sunbathe - imagine a typical UK summers day,
