You can go as far south as McWay Falls at Julia Pfeiffer Burns State Park.
Get an early start from Capitola. Head for Point Lobos just south of Carmel for a few hours of easy, short hikes.
Bixby Bridge: 10 minutes
Pfeiffer Falls trail inside Pfeiffer Big Sur State Park: 1 hour (your entry stub from Point Lobos will get you in without having to pay again)
Pfeiffer Beach: 1 1/2 hours
Nepenthe: 1+ hour (lunch with a view)
McWay Falls at Julia Pfeiffer Burns State Park: 30+ minutes (famous waterfall that drops on to an inaccessible beach. Your entry stub from Point Lobos also gets you in withot having to pay again). This park is 8 miles south of Nepenthe.

I gave you the short list.
If you still have ample daylight after finishing at McWay Falls, you could opt for some time at Andrew Molera SP and/or Garrapata SP.
Your entry stub from Point Lobos will also work for Andrew Molera.
The entry fee at Point Lobos is good at the 4 parks mentioned as long as you visit all of them on the same day.
I am also looking at doing a day in Big Sur like this, but plan to do Point Lobos last. Will our fee for Julia Pfeffer state park get us in to Pfeffier Beach and Point Lobos?
Pfeiffer Beach isn't within the state park system, so your JPBSP entry stub doesn't apply. You'll have to pay a separate fee for Pfeiffer Beach. It will get you into Point Lobos, though.Edited: 26 February 2016, 07:23
