Does anyone have any suggestions on where to stay in Katori. I am finding it difficult to find any hotel information that is in english. Any bed and breakfasts? airbnb?

Kashima Jingu has hotels (Business Hotel Suzusho etc) for visitors to Kashima Shrine and Antlers football match. Itako also has hotels (Itako Hotel). Sawara City next to Katori has hotels and ryokans, too.

This information is not directly you answer but i really want to suggest Katori city especially SAWARA one of part of Katori.

If you need to stay Narita the day before leave japan definitely stay Sawara which is close to Narita and more Japanese.
