Maybe research about what elephant trekking can involve. Now many group adventure tours have deleted such activities from their itineraries.

it is difficult to arrange a day tour that doesn't involve elephants but it can be done

Yes, in many cases the elephants are mistreated. During our last visit we were in Chang Mai and the elephant had dreadful oozing sores on his neck where the mahout kept hitting him with a sharp pick. Do your research thoroughly and check reviews before you embark on any tours with elephants.
