2 days and nights between Shinjuku and Toba

We have 2 days to fill before arriving in Toba. We were interested in Gujo Hachiman and Replica Food Lesson, but now thinking that 2 days will be too long with nothing much to do. We will be arriving there by train from Shinjuku, but am thinking of hiring a car to drive down to Toba, then to Mt Koya for overnight and on to Namba, leaving car there. Then training to Hiroshima to continue holiday.

Questions are,

Should we only do one night in Gujo?

Can we hire a car there, or should be pick one up before we get there? or after we leave there?

Any other suggestions for a night inbetween, or somewhere else altogether.

A better plan is to take the train from Tokyo to Nagoya. At Nagoya or Gifu (if you have a rail pass), pick up a car and drive to Gujo Hachiman. You can also drive to Takayama and Shirakawago. Ideally, you would want 2.5 to 3 days for the trip though you could squeeze it into 2 days if you aren't flexible. Return the car at Nagoya or Gifu and continue by train for the rest of your trip. If you are going to drop the car off at Hiroshima, the drop-off fee will be very expensive.

A JR Pass could save you money though it depends on your final itinerary and where you will be going after Hiroshima.
