Southern Vietnam for 3 weeks

My wife and I (young 60's) have been making our way down Vietnam for 7 weeks, just come from Nha Trang and now in Da Lat. We fly out of HCMC in 3 weeks time. Obviously we need to explore the Mekong Delta and HCMC but how can we stretch this out for 3 weeks? Mui Ne seems to be just another beach town with nothing we haven't already seen further north so we wonder if heading inland from Da Lat and initially doing an inland bypass of HCMC is an option? We've dismissed Phu Qoc (we live on an island ourselves in front of a beach) so we can't see it offering anything special. We have no objection to hunkering down in one spot if there is plenty to see in the vicinity. Suggestions welcomed.

From Dalat go and spend a few nights in or around Cat Tien national park. Travel agent in Dalat can arrange that for you. Do not think you can avoid the chaos of Saigon heading towards the Mekong. Some great spots to visit and stay in the delta away from the crowds. You could also consider going into Cambodia.

Agree with post #1 - On the way from Dalat to HCMC, you can consider a visit to Cat Tien National Park.

If you fancied a little time in Cambodia, you could stay a while in Can Tho for markets, then travel to the border crossing at Ha Tien. From there you have Kep and/or Kampot as options.
