Chicken Penang on the Beach

Hi

We've just returned from Hua Hin - what a beautiful place full of beautiful people. While we were there we had some delicious food from a beach cafe next to Sunshine massage ( she's a fab masseuse) In front of marriot Hotel I particularly wanted to know what veg would have been in my chicken penang?. It was pale in colour quite firm (like most stir fry veg)and cut like a french fry. It wasn't potato but was slightly crunchy and mild tasting - any of you experts know what it may have been ? ( damn I should have asked while I was there lol ) thanks :-)

And yes, correct name is panang, though many restaurants, cook books etc wrongly name it Penang.

Now my wife is saying possibly water chestnut?
