If you are just visiting the Bridge this is not classified as an exit, because you are not entering the country on the other side, you just get a pass from immigration. No need for the extra visa

As you probably know Indians are required to apply for an e-visa prior to arrival in Zambia. The visa is then paid for and placed in your passport on arrival at the airport in Lusaka or at the border post if you are coming in overland.

When you arrive at immigration you could ask for a UniVisa instead of the single entry visa you will have applied for on the e-visa platform. As this costs the same as a single entry visa I think the immigration may be happy to issue with the UniVisa. This UniVisa will enable you to enter Zimbabwe and return to Zambia again without the need for an entry visa for Zimbabwe or a double entry visa for Zambia.

Maybe the immigration officer won't agree to give you the UniVisa but there is no harm in asking as the whole idea behind it is to encourage tourism and India is a key market for both Zambia and Zimbabwe.

If you are able to get the UniVisa then it would certainly be worth visiting the Zimbabwe side of the falls after you do your bunjee jump as there is a lot more of the falls to see on the Zimbabwe side than in Zambia and Victoria Falls town has some nice shops and resturants. Its all in walking distance from the bridge after you do the jump. Then after a few hours on the Zimbabwe side you can just walk back accross the bridge to Zambia.
