You should probably plan on flying home from Las Vegas, too. Phoenix *might* be an option if the rental car drop-off fees aren't too high, but they typically gouge you big-time for dropping vehicles off anywhere other than where you picked them up from. It's because of the remoteness of the area and the distance between cities.

So, for your interim day, a natural choice would be Page, Arizona. It's ~2 hours from Monument Valley, and has lots of scenic and family-friendly attractions, such as Antelope Canyon, Lake Powell and Horseshoe Bend. You might even consider taking a day off Monument Valley and giving it to Page so you can take part in the Glen Canyon Half-Day Float Trip from the base of Glen Canyon Dam to Lees Ferry, or perhaps a boat tour on the lake. The drive back to Las Vegas would then be ~4.5 hours. Sample 2-day itinerary in Page: https://horseshoebend.com/48-hours-in-page/

Another possibility, which would be right on your way as well, would be Zion National Park. Great scenery, and hiking opportunities, ranging from super-easy to crazy-hard, and everything in between. Lodging in Zion itself is hard to come by, but staying in Springdale, UT, just on the Western border of the park, would put you just 3 hours from LAS.

Ditto K-Bot.

Page or Springdale for Zions or even both are logical additions to the plan. Since you’ll have two nights at Grand Canyon National Park, you mind find one night to be sufficient at Monument Valley unless you want to do an all day tour there.
