looking for an old historic center setting, with no cars, and lots of restaurants, etc...is this a quaint center?

The old town of Castiglione della Pescaia is very steep for the most part and has just few restaurants. It's quite attractive and has very extensive views up and down the coast. If you would have a reason to go to Castiglione della Pescaia, for example, the beach, then it's definitely worth climbing up to the old town, but I wouldn't travel all the way there just for that. The best seafood is to be had at the restaurants attached to the private sectors of the beach.
