Definitely the octopus...... the chef, Giorgio Locatelli, remarked that instead of boiling octopus for a couple of hours, Neapolitans braise them gently in nothing but a little olive oil for 45 minutes.
This shrinks and concentrates the flavour of the octopus..... so tasty.
The pasta with clams or mussels is also superb.
If you take a ferry to Ischia, you'll see thousands of small plastic buoys in the bays..... they're holding up ropes where they grow mussels.

No one mentioned the Genovese Sauce, which is actually one of the most typical neapolitan dishes.
