Rural/agricultural day tours in souther Ireland

We will be on a limited time schedule to travel in the south and would appreicated suggestions for a tour possibility in the more rural areas (large towns to head out from?) between April 28 and May 2, 2012. We do not want to drive (prefer guided tours) and will be starting those days after a week in the Galway area seeing tourists points out from there. I may not have selected the correct forum for this question!

This is the only company I've come across that mentions 'rural' as such. It's called A Rural Experience and is based out of Kilkenny:

Having said that, it would be safe to say that many - most even - tours out of Dublin, Galway, Limerick and so on are through and to rural areas, although not necessarily with any emphasis on things agriculture:

The closest that agriculture gets a mention in these forums is in relation to Agriculture Shows or Country Shows, most of which take place between June and October - later than your visit.
