Tourist Cards are a no brainer when departing from Canada.
The Airline, Tour Operator, Travel Agent, etc. MUST provide you with a Tourist Card before you arrive in Cuba. Sometimes you get charged for it, sometimes it's included in the cost if your ticket, but you WILL get one, no worries.
The new Tourist Card is even simpler than the old one. It takes a few seconds to fill out. No big deal.
From Montréal with Air Transat, you will receive the card in the plane for free.
The price of the tourist card is inncluded in the price of your ticket, you will not have to pay.
The departure tax is 25CUC per person, which you pay before leaving Cuba to come back to Canada.
You will easily find TA's counter, just follow the electronic boards. If you imagine the airport as a rectangles, the AT counter is usually on the oposite side of the entree doors on the second floor.

Thanks for the info on the tourist cards. I made a mistake when asking about the fee on them. I know there is the fee to get out of Cuba. I had heard it had gone up to $30CUC. This is our second trip to Cayo Largo and 10th to Cuba. We are staying in the Gran Caribe hotel section. We like small hotels and peace & quiet. We are not hard to please. Lots of cold beer and a fridge in the room is a must though.
