Having just returned from Spain we had had withdrawal symptoms from good French cooking, during the season we have dined many times at the cassoulet gourmand on the port , this only opens in the season so we thought let's give their head office a go we had often passed the hotel de France but never ventured in , well... Two choices of entree and one of them is always cassoulet. Rich and plentiful, the cassoulet is still just pork and beans. Service genial but slow. Dessert was almost unpalatable. Sad, dreary atmosphere.

While looking for a nice cassoulet lunch during our visit to Castelnaudary the Hotel De France was recommended to us by a local resident. Breakfast was ok but had to go elsewere for cassoulet. Found a nice place just roundt the corner, turn lef at font door, 50 metres archway on right then 70 metres on right, vey good cassoulet, very good local wine. Name gazouillis, family run friendly. We stumbled across this hotel one evening when most other restaurants were closed. The menu was quite typical of this area. The restaurants appeared to have been re decorated and was nicely presented. The service was ok and the food was good. Having two children who can be fussy eaters the menu lacked choice although the steak was a result.

One of the two best of six I have tried here. Go when hungry. Good service...real plain atmosphere. Not a great choice on menu, but enough for most. Reasonable price.

Local ingredients. Rabbit terrine, foie gras, , beautiful chunky pork sausages,perfect trout.......all at prices thar won't cause cardiac arrest (even if overeating does! Beautiful choice of house wine at 10 euros (half-litre bottle) Immaculate presemtation, great service,outstanding value for money.

We went out of our way (which would have been Carcassonne to Lyon) to try cassoulet, and the one at Hotel de France did not disappoint.
