We went here for the grand reopening of Cabo Mexican inside Boulder station for the 50% off special sun-Thursday. While it seems like they still run the same show at the entrance of the waiting list from wait will seat you when we feel like it. I ate here twice during a recent stay. Each time my El Presidente margarita seemed very short of tequila and when paying for a premium margarita I expected a little more kick. Very watery. This used to be the Cabo. It had great food and appetizers. Then they changed the name and suddenly a lot of our favorite menu items were gone. The service has become really poor as well. We don't even bother with it anymore.

We have frequented this restaurant almost every time we come to Vegas. We love Mexican food and this restaurant does not disappoint. They always offer a great luncheon value which we love to try. This is an amazing restaurant i love their salsa specially the mango one!!., i tried the chile relleno and it was pretty good., also the shrimp fajitas were excellent ., lots of tequila to choose from in case you wanted some buzz before hitting the casino.

I was floored to read a review that said the chips were bad at this place. They're the best! My wife and I have eaten at this restaraunt at least three times and love the chips. Guadalajara in 2001 = Excellent.....Guadalajara 2008 = Terrible. The service was terrible. Probably because they recently layed off a bunch of employees. The chips were stale even after the Chips & Salsa bar was replenished! The Margarita's had no alcohol and about 2 pounds of sugar. Oh my god...their bean dip is to die for! I love this place and I look forward to the times I get to come here. The service is always great, the food is amazingly inexpensive and their salsa bar is wonderful. I'd recommend the beef tamale's...but after you fill up on chips and bean dip...mmmmmmm mmmmm good!
