We did not enjoy the dinner. I don't recall what we ordered, but it was not a good value. The service was excellent.

We both enjoyed the Prix Fixe menu. Both of our filets were cooked to perfection. Prices for what we got were great, wine was great, atmosphere was great. The server seemed rushed which was strange considering we had gotten there early in the evening before they got too busy. He almost acted like we were bothering him by taking up... More

Took some associates for dinner there last night. The menu was impressive without being cumbersome and the wine list was vast. It's always interesting to watch the women in silver suits go searching for your. Little of wine in their climbing harnesses. I had the lamb as my main and it was as good as any NZ lamb I have... Charlie Palmer has brought a stunning menu to accompany the glorious tower of "wine angels". The Fried "Chicken Oysters" and "California Crab Roll" are breathtaking starters. And the porterhouse will blow your mind. All the details put into the dessert range from edible flowers to a coffee panna cotta that melts into a personal sip of heaven. I can't rave... More

This was our first time to this amazing restaurant. The service was perfect, I don't like servers who hover, but who are attentive when they need to be. My husband and I are traveling with our 2 teenage sons. Upon looking at the menu our kids were a little out of their comfort range... but that all changed with their... More

Place is nice with a towering choices of fine wine. Nice to see the lady coming down the tower suspended with almost invisible cables bringing down wine. The food was so so. Ordered the 5 course dinner. Simply a disaster but wonderful if you don't eat much. Tiny portions almost comical. Father had steak , the biggest they had (... More

The setting at the lobby of the Mandalay Bay hotel with the cellar is impressive. We had a set menu during a business dinner that was excellent with three courses of salad, steak and dessert. All perfectly prepared. Very nice place. Ask to enter the Cellar, its really impressive

Description
Although it's the largest city founded in the 20th Century, Las Vegas retains the energy of a frontier town where the unexpected is still a daily occurrence. The dining scene is equally as adventurous and Charlie Palmer is one of its trail blazers. Sensing that Vegas was about to undergo a renaissance, Palmer made an early investment, opening Aureole in the Mandalay Bay Resort in 1999.

The show stopping menu under the direction of Executive Chef Vincent Pouessel combines the classic cuisine of Aureole with the theatricality of Las Vegas in dishes like Olive Oil Poached Oregon Petrale Sole with Truffled Brussels Sprouts and Ahi Tuna and Veal Shank "surf and turf", while a four-story, temperature controlled glass and steel wine tower-the largest in the world-houses 10,000 of Palmer's award-winning 50,000 bottle list, made accessible by an elaborate pulley system presided over by "flying wine angels" clad in black spandex Calvin Klein. After all, this is Vegas.
