we came to aureole for the thanksgiving dinner special and are so glad we did. the menu included all of the holiday favorites but with a twist. i am still holding on to the taste of the bread pudding stuffing which was out of this world. the service was wonderful. the place was packed but it didn't feel that way.... Place is nice with a towering choices of fine wine. Nice to see the lady coming down the tower suspended with almost invisible cables bringing down wine. The food was so so. The setting at the lobby of the Mandalay Bay hotel with the cellar is impressive. We had a set menu during a business dinner that was excellent with three courses of salad, steak and dessert. All perfectly prepared. Very nice place. Ask to enter the Cellar, its really impressive

What a value in Vegas, Prix Fixe Menu 3 course for $55 and 5 course for $65 - with terrific food, ingredients, service, bread, wines and dramatic ambiance. I am afraid they may revamp this restaurant so hurry.

Great steak, huge wine selection (it is literally a 4 sided tower) and they have a deal for a three course meal for $55 at the moment.

One of my favorite restaurants in Vegas located at Mandalay Bay. The food is outstanding and the wine list is out of this world. The wine Angel will hoist herself up in the wine tower to retrieve your bottle. The ambience is great and the service was outstanding. Highly recommend.

On our last night we were determined to find fine dining and windows. Unless you are outside on the strip, most restaurants within the casinos are windowless and have slight lingering smoke scents given smoking is legal in casinos. Aureole has lovely window dining tables with windows that are open with fresh air coming in. However, more importantly, the food... More

Description
Although it's the largest city founded in the 20th Century, Las Vegas retains the energy of a frontier town where the unexpected is still a daily occurrence. The dining scene is equally as adventurous and Charlie Palmer is one of its trail blazers. Sensing that Vegas was about to undergo a renaissance, Palmer made an early investment, opening Aureole in the Mandalay Bay Resort in 1999.

The show stopping menu under the direction of Executive Chef Vincent Pouessel combines the classic cuisine of Aureole with the theatricality of Las Vegas in dishes like Olive Oil Poached Oregon Petrale Sole with Truffled Brussels Sprouts and Ahi Tuna and Veal Shank "surf and turf", while a four-story, temperature controlled glass and steel wine tower-the largest in the world-houses 10,000 of Palmer's award-winning 50,000 bottle list, made accessible by an elaborate pulley system presided over by "flying wine angels" clad in black spandex Calvin Klein. After all, this is Vegas.
