We had a hard time finding this place because it is in a hotel called L'estampilles. Greeted by Regis, the chef, we had a personalized menu that was fantastic. We stopped in Baie St Paul after wining and dining through Montreal and Qubec City. Good restaurants in town heavy tourist trades and lots of traffic but mostly good. The chef-owner has a very limited edition menu, prix-fixe at 50$ for entrée, main dish and dessert. There were three choices for each dish and my wife and I had different dishes. All six were first class as was the wine. All items are apparently produced locally. Not to miss!

We really enjoyed our meal. It was fine French cuisine with local ingredients. I am a vegetarian and Regis was happy to accomodate my food preference. Regis recommended a good French wine. My meal consisted of a delicious light pumpkin soup, goat cheese encased in an apple ( very unusual but nice). Lentils with poached egg and scrumptious raspberry tart.... More

The food is absolutely incredible at this restaurant! You must go if you are in the area, the chef, Regis, is insanely talented and very humble. Dinner at L'estampilles. Chef designed and cooked dinner. Appetizer - a round of soft goat cheese, heated and held together by a strip of bacon, which sat on thin crisp potato rounds residing on a bed of spinach. Chef Regis has been gone for a few years- personal life got in the way. He taught cooking in Drummondville and is back with new partner from there, lovely Isabelle. The breakfasts are excellent and very unique. The chef comes to the table himself yo explain them. We had dinner there also and the menu was based on Quebec produce. Delicious! Well worth the visit and stay there too!!!!

We stayed at this beautiful B and B but also felt the dinner we had there deserved a review. Excellent!!! Martin is a superb chef!! Enjoyed every course....a memorable meal! We enjoyed 3 fabulous dinners in Baie St. Paul....this was the best!
