It's hard to find words sufficient to describe my experience at Ultraviolet by Paul Pairet. Peerless. Unparalled. Rare. Incredible. From the moment I arrived at the meeting location until leaving in my Didi, every single moment was crafted to create a lavish and decadent experience that made me feel incredibly special and grateful. The hosts Baptiste and Collin were superb. The food was not just delicious on the palate but also stimulating to the senses, so creative with flawless execution. I would go back again and again for different menus and experiences. If you're in Shanghai and want a truly special night that you will never forget, UV is absolutely worth months of waiting for the reservation and every single yuan. Completely worth it!

Probably the best dining experience we’ve ever had. Superb food creatively served with non-stop surprises in terms of the environment. And a real pleasure to meet this talented chef at the end. Don’t have an expectation, just go. It’s absolutely worth the breathtaking price ($$$$$$) which I didn’t think I would say. But wow. I can’t say more.

After 5 years of debating with my wife about the price, (yes, it seems expensive) we decided to book for our anniversary, this was the best decision we have ever made.
This is so much more than a restaurant, Paul Pairet is truly one of the greatest chefs, a complete genius, an artist with taste and flavor. The food is out of this world, the room brings it to another dimension and the choreography of the team is next level. The service is led by David, who directs the show inside the room with charm and entertainment and surprises.......my mind was blown!
To top it off, the whole table get to enter the kitchen of Paul Pairet at the end and spend time with the genius himself, a real gentleman!
Bravo Paul, Greg & David to the most extraordinary evening!

After months of planning a trip around China we were looking for a culinary experience that would blow us away Ultraviolet did not disappoint.
These guys have spent a lot of time getting this 20+ course menu spot on. I have never had such an immersive meal, all aspects of the food, wine, smells and theatre were just so well executed.
We were a bit apprehensive about there being just one table of 12 people but once the meal started we were all just along for the ride.
We were so lucky to get seats on a day we were in Shanghai and I do not regret in any way booking this experience, once in a life time.

You meet at mr & mrs bund and they have a shuttle bus to the location. There are about 33 staff for 10 guests
This is a sensory overload location with videos, music, smells and staff dancing. Like disneyland
There are about 18 courses and every one either very good or excellent. Standouts include the crazy tender chicken and wonderful mandarin dessert. Hence the 3 michelin stars
Besides the ingredients which are not hyper premium (no caviar , uni etc) , the high price is partly due to the non optional wine pairing. The excessive alcohol too much for me

The most incredible dining experience of my life. I have been to more than 20 Michelin 3 starred restaurants, and still nothing stands even close as a dining experience. Alinea and Per Se may have slightly better food, but nothing even close to the experience of this restaurant. Every course is a delight to the senses, and executed with perfection. Paul Pairet is definitely the best Chef in Shanghai. If you have the opportunity to dine here, do not miss it.

We (family with children) went there on a special occasion... I won't discuss the cost as it's a known figure and as in any restaurant, you know it before you go. We're quite used to 3 michelin starred places in Europe and Asia, but this is not only next level, but also next gen. Of course not all plates please your palate the same way, but it's an absolute treat, an amazing experience, and Collin "The Host" made our experience a very remarkable one. It's a very private and luxurious show, the cooking techniques employed are world class, as is the service. A true masterpiece.
This diner alone was worth the entire trip !

It is difficult ti describe into words my amazing gastronomic experience of this place. Our hosts David and Collin were very friendly and entertaining. All dishes served were delicious and creative. The highlight of the night was getting to meet Paul Pairet at the end of the show. We were given a peak of the kitchen and some explanation of what goes on during dinner.

You can read all the reviews. Worth every cent. The trick is to get a seat. There are a few articles on the net in how to get in. We found that some people who get in right when the gate opens, book all ten seats. Then about a week before, they realize they can't fill the table. So they relinquish seats. And they will pop up for you if you are on the wait list. Stay by your computer. That's what we did.

The top one Michelin star restaurant in Asian. Throughout the whole night, no any kind of restaurant that can offer the same experience to me in Asian. The menu D is the newest one and it just offer to public under 2 years. Must to try.

Dining at Ultraviolet by Paul Pairet in Shanghai was an extraordinary and multisensory culinary journey. Amazing experience ! Happy to try before I leaving shanghai and happy to have this beautiful experience / perfect service and perfect kitchen ! Something not usual and worth to do it one time in life / yes need a certain budget to go but forget what you pay and enjoy it ! And we lucky to see the chef Paul pairet ! Very good human person ! Highly recommended and thanks again to make me live again the gastronomy

How to start, I guess with the White Elephant, the cost! UV was opened in May 2012 and at the time prices starting at 2,500rmb. Several years on and now the price begins at 4,000rmb (Tue & Wed) moving to 8,888 for the top end experience. Seats are booked out 3 to 4 months ahead, with just 10 seats per night there’s no shortage of customers, even now when there’s zero tourists visiting this great city. I’ve been more than once, and for each visit I would include into some of the best meals I’ve had in Shanghai. People have asked why I would spend so much on a meal and even return, but why I balk at the price of a coffee in many of the beverage chains or even the cost of branded clothing and foot attire. My reply is always the same, because the dinner at UV I can see where the cost goes. Another reason is that similar fine dining venues in the city are actually similar in price, what people don’t realise is the amount of drinks that are included as well as the ‘open’ bar (shhhhh) along with the theatrical experience. It’s a night out with pre-dinner drinks, dinner and drinks, a show and drinks, and post dinner/show and drinks all rolled into one. Now we have that out of the way I can elaborate a little more on the extremely immersive experience that awaits you should you ever visit. To begin, there’s 35 staff for 10 diners, one waiter/ess per diner. This may seem like staffing rates at a boutique hotel in Central London at major lockdown during Covid but it ensures each dish is delivered in a synchronised display worthy of a Russian ballet academy. Cutlery smeared with 49% butter induced, on the verge of splitting, mashed potato, miraculously are cleaned and repositioned with the stealth of a pickpocket working the MRT at peak rush hour. Although these theatrics enhance the overall gratification of the evening, it’s the food that everything emanates from, the foundations that the cathedral to the culinary experience is built. I can’t even begin to imagine how some of the dishes are created and put together, to be honest I don’t even want to know, it would be the same feeling as finding out as a child that Father Christmas is nothing more than your drunk parents staying up late once a year hoping you’ll fall asleep before midnight so they can be fresh as a daisy the next day to handle all the family members you do your best to steer clear of the other 364. Greg Robinson and Glen use some kind alchemy that they must have obtained from selling their souls to the dark side, mixing flavours and sophisticated techniques to produce dishes that are melodious and mesmeric raised even more into the stratosphere when during the delivery of the dish scents of the theme waft through like an Italian heiress gliding through Osteria Francescana on a warm summer evening. Your every sense is triggered and during the course of the 4hrs there will likely be moments that evoke strong emotions transporting you back in time like an old tune from your school disco days. As well as the food there’s the excellent cordiality from both David and Collin whom are highly proficient in ensuring that the only important item on the menu for the evening is You! I’ll be back again soon as what is life but to enjoy. To quote a phrase - C'est magnifique et delicieux!"
