Usually a go-to for us if we want sushi in singapore. The branch at st regis lost its michelin star last year and this carlton branch kept it You start with nice appetisers , grilled items and then an array of sushi, about 10 pieces....All very good to excellent Service is very good as usual with the interactive japanese chefMore

I love Japanese food so I decided to treat myself when I was working in Singapore (why not?). Shinji seems to offer two sittings for lunch and the restaurant is very intimate with seating around the bar so you watch the chefs work. Perfect. I...arrived for my lunch with a warm greeting and a stool for my bag. I decided to have the 'chef's surprise' whereby the chef prepares a number of different dishes for you, including hot dishes, and a selection of sashimi and sushi. I started taking notes of what I was eating so I could tell my other half when I got home but stopped after the fourth dish and just savoured the whole experience. This was an expensive treat for me but it was one that I will always remember. I fully intend to return next time I'm in Singapore.More

I agree with Sharin's review in Dec 2020. This place is like a fast food restaurant, not much service and staff was trying to chase us out. Really terrible experience. We ordered the omakase, the sushi were average and other dishes below standard. Feels like...a $200 meal rather than a $1,200 Michelin experience. Mr Michael Ellis from Michelin Guides, I hope your team will review Shinji by Kanesaka restaurant soon to be fair to consumers that follow your guide, I think their 1 star Michelin should be stripped.More

Had an amazing lunch at Shinji at the St Regis with my hubby when we were back in Sg to visit family. Every single dish is amazing, I exceptionally love the smoked sashimi dishes. And the best melon I ever had! The chef was very...skilled and professional and explained to us the different dishes and which part of Japan the fruits come from. Prices were steep as expected, approx $800+ for 2 people for a weekday lunch. But the meal was really unforgettable.More

A good Japanese meal is a multi sensory experience, but above all, it’s the personality of the sushi chef and the authentic warmth and hospitality of the receiving and service team that gives you a warm glow in your heart, and the meal becomes special...and most enjoyable. Shinji shared this gift with us and we are most touched. The chef gave us all an amazing meal - he was chatty, informative, friendly and engaging. We felt like we were dining in his home and he was delighted with our presence! The serving team was so very attentive. Congratulations Shinji!More

The ultimate Japanese culinary experience outside of Japan. Chef Kanesaka brings his experience to an establishment that offers delicacies that once were only obtained in Japan. Each dish is meticulously prepared in front of the guest by sous-chefs with the mandatory minimum 15 years mentor...ship before they’re allowed to pick up a sashimi blade. The seafood exquisitely seasonally sourced from various areas of Japan. The best two areas for Uni are presented and yes one is from Hokkaido the most renown place for Uni. However, the other is least expected and is a marvel to have. It shall remain a secret and for those that can make it to this restaurant during this season of Uni. The various fish are expertly prepared and are some of the best tasting sashimi you can have as they were marinated in the traditional manner which takes time as all good things in life. The marination process is elaborate and only enhances the texture and sweetness of the fish. The rice is superb on its own or presented in sushi. It too is well prepared. It is a mouth watering experience that needs to be had.More

Was totally disappointed with the service @ Shinji by Kanesaka. (Carlton Hotel) Our Omakase dinner was served at super speed, faster than we could chew. :( When we wanted to order another beer 20 mins before the time that we were due to leave the...restaurant, the server said, “Are you sure you want another one?” Clearly trying to rushed us out. We were constantly reminded about the time we had to return the table throughout dinner. Omg, this is totally unacceptable from 1 Michelin star restaurant. Definitely the fastest & most horrible way to spend $1.1K. Wouldn’t recommend anyone to head back there!More

I've always been a believer of you just need to be very good at one thing, and you will be very successful. For that reason, I've always been drawn to single-minded proposition eateries. Shinji is a prime example of those. For an omakase or kaiseki...restaurant, I think it's easy to want to try to do too much because there's so much to offer for Japanese cuisine, which can end up with very confused diners and even a confused identity. I guess that's how Shinji stands out from the crowd - by sticking true to its roots and stick to serving really good sushi.More

Been to the original raffles hotel, and later st regis and this carlton branch many times. Like the food quality, and friendly vibe of all shinji’s. From appetisers to sashimi to grilled dishes to sushi, all excellent. Expensive yes, but good for the occasional splurge

Amazing Japanese cultural experience, however this place is only suitable for Japanese or people who really understand and is comfortable with real Japanese food. This is not Nobu or Novikov style sushi. - Not many people can eat and appreciate this stuff. Did not work...for me or my family really. Well one of 4 of us liked it and the remaining 3 were about to get sick. There are sets only for lunch. Normal ones are $250 per person.More

The omakase was good but left much to be desired. Quality has definitely dropped since my last visit in 2018. For the price they are charging for the omakase, I expect a lot more.
