About
Taiko is the Conservatorium Hotel's leading restaurant. Named after ancient Japanese drums said to beat with a mythic rhythm, Taiko is situated in the former percussion classroom of the conservatorium music school. The restaurant serves a wide variety of Asian inspired dishes, from beautifully crafted sushi and fresh sashimi of the highest quality, to unique signature dishes like black cod with green miso and see vegetables, and a green vegetable curry with ginkgo nut and lime risotini. Our Executive Chef Schilo van Coevorden has worked extensively around Asia, feeding a passion that has continued to grow to this day. Returning to Amsterdam, he long dreamed of marrying his love of the Asian cuisine with local, seasonal produce to create a whole new concept. Taiko is the realization of this concept where Schilo combines all the skills, ingredients and flavours he has discovered in the Far East with the best of our local Dutch offerings. The menu is designed for shared dining, with dishes that are placed in the middle of the table and can easily be shared amongst groups.

The dinner was amazing. As we watched the team of chefs being busy behind the glass wall, we enjoyed a truly amazing 8 course Omakase dinner. Dishes like the Tofu Skin, the scallop and the Wagyu beef were the highlights. Service was excellent. Did not expect this level of culinary creativity as part of a hotel. But then again, it is the Conservatorium and that by itself is a rather unique place

Recent dinner in Taiko, v nice food and fantastic service from our Italian waiter, Michele. Only drawback is that the restaurant is merged with the Brasserie so the menu is more limited. Apart from that it was v nice, the Wagyu Katsu is amazing.

After 2 years we were looking forward to revisit this restaurant in the beautiful Conservatorium Hotel. In the past we had some fantastic dinners but evolving to too expensive.Now we choose the menu with the 7 signature dishes of the chef.It started with on an unbeatable way with 3 appetizers. 6 of the 7 dishes were confirming the great quality of this kitchen. Only the dish with the 3 preparations of Wagyu beef was lacking balance. This time portions were again royal and justifying the price of the menu (135 Euro). Seating is still great even if tables are very close to each other.Service is friendly and energetic but overlooking some details being not concentrated enough.Nice selection wines at reasonable cost. So overall a great experience to be repeated. Certainly if you do not need to go to the restroom( far away, small, architecturally and style-wise not fitting with all the rest)

Taiko restaurant is located in the Conservatorium hotel and inside it is impossible to tell if it is day or night. The hotel has almost no windows and is very dark inside which is disorientating. Taiko is beautifully decorated and the staff is welcoming and friendly. If you are Dutch it might be good to know that almost none of the staff actually speak Dutch. The music is just a little too loud so it was hard to understand the softly spoken waiter. We ordered the dishes recommended by our waiter (who unfortunately wore a very overpowering cologne) as the best of the menu. The prices are steep, very steep. The food was fine but nothing special. Would we come back? For the ambiance, yes, for the friendly staff yes, for the food, no. There really are Asian bistros in Amsterdam with much better food and much lower prices.

To celebrate my wife's 30th birthday we went and had the 6-course Omakase menu, but were both very disappointed at the end of it.
The restaurant is absolutely beautifully decorated and the staff is friendly. But unfortunately we couldn't shake the sense it's an absurdly overpriced establishment for the quality of food. You can tell a lot of thought and effort is put into every dish, yet the majority somehow still fall flat due to a general lack of flavor, or trying to force combinations that just don't work in practice.
The lack of any meaningful explanation of what the desired effect or intent behind the flavor combinations are, also makes for several unpleasant surprises. On serving, ingredients are simply listed, together with an "enjoy".
All of this wouldn't be anything bad, if you're not expected to pay michelin level prices for generally average flavors. I'm sorry to say that there are dozens of restaurants in Amsterdam with significantly better food at half the price.

I don't want to eat raw tuna (or cooked for that matter) with watermelon ever again. I appreciate innovation and creativity, but some edits need to made when experimenting in the kitchen.
The service was slow, the food horribly mediocre (some dishes were okay, some were just not working), and the the atmosphere was trying too hard.
Wanted to love it (was staying in the hotel) as it was mighty convenient, but it just fell flat for us.

What an immense disappointment. Food in Taiko was fine as usual, but the ‘official’ restaurant has been closed and the customers sit in the hotel lobby. Not a premium restaurant worthy. Wine list has been shortened and service too. All fine if you lower pricing accordingly. We had dinner with four people in a hotel lobby and had a few drinks. A bill of 900 euros (including tip) does not seem right in proportion. If you ask these amounts of money your customers deserve great service, a lot of choice and a premium experience. None of those were there.

We were met by Dutch talking staff that continued to talk Dutch to us, even though we spoke English. Drinking menu was not given to us when the waitress came to ask for what we wanted to drink. We ordered wine and beer, they served the wine and the beer came 5 minutes later. The restaurant was not crowded at all. Poor service of food, all the dishes came in a period of 10 minutes. To top it all they forgot to serve fries with one of the dishes that were supposed to have it.
If this would have been a super busy service for the staff I would understand the mistakes and the delay, but most of the seats were empty.

I chose those for a birthday dinner during a trip to Amsterdam as it was gorgeous in photos and has a great location. The setting was just as lovely in person as in photos, very intimate and well designed. While the setting was certainly worth of a fine dining establishment, the cuisine was rather average. Our whole party ordered the multi course tasting menu, which was undoubtedly composed of quality ingredients, but overall the food was not very exciting. While it was presented well, the taste was not enticing or flavorful enough.

Over the past week I had the pleasure of dining at 3 different high end Asian Cuisine restaurants and this was by far the worst. The restaurant itself has a great atmosphere (being part of a hotel, even better; a great hotel!) and the staff is friendly. Although friendly staff it took a while (15 minutes) before the drinks came to the table. It seemed like they were puzzled about who was doing what. We ordered several dishes and we were dissatisfied and disappointed about the quality. The presentation of the food was second to none however for example the Soft Shell Crab was not crunchy at all and tasteless. Wagyu beef overpriced for the simple style of preparation. Sashimi (all 3 different sorts) was frozen!!! In short; the slowest service in town and way overpriced for the quality what was offered. Sorry for no better news.

I have visited better Japanese restaurants in Amsterdam, like EN in the Pijp.
Taiko's food is high priced, there is noisy admosphere (the staff even switched on lounge music in the middle of the dinner to make conversation with my partner virtually impossible), The wagayu beef sushi was delicious by the way.
Staff was polite, but difficult to signal. People on the other table finally got up and started to poor their white wine themselves. My Lobster curry was not piping hot. It was certainly not the value I expected for my money. I won't be returning here.

Gave Taiko one star in July when we had a horrible dinner there. Today, three months later the F&B manager writes a standard cut and paste apology. Three months later. Again, the restaurant should not open if it does not have the team to service the guests. And this F&B person should be let go for responding a quarter of a year later. A complete joke!!

Bad and very boring food, please stick to your own kitchen. Two weeks ago, Taiko organized an evening with the theme of Szechuan cuisine. A team from a Michelin star restaurant was flown in for this purpose. Things did not go smoothly upon arrival. We were put next to a large group of 20 people, so I immediately asked if we could sit somewhere else. Our friendly host did his best, but the manager that evening said it was not possible because it was full. To our surprise, the entire restaurant remained 2/3 full. That could happen, but the food... ooey, this wasn't good. After the third course we asked where the Szechuan was. that would come. The dishes before this were flat in taste, had no depth, lacked inspiration and perhaps had a little tingle somewhere in the distance. The wagyu was tasty, but hey, what can go wrong with this if you put it on a grill. The only Szechuan we received was thrown on a deep plate with a piece of fruit on top with something in it, for decoration purposes. The plates were laid out without inspiration, it was a mockery. A cowardly dessert with three blubbery fish is really not going to cut it, nice try, but unfortunately no taste. It's almost amazing that you can draw up a menu so without inspiration. When I got home my stomach protested again. I called immediately the next day, said I would be called back before 7 p.m., but heard nothing. I tried again the next day, because I didn't want to write a bad review, always waiting for an explanation first. Unfortunately nothing again. I thought I'd call again. This time I deeply apologize that I did not receive a call back, but I will be in touch today. It's been a week and still nothing! Then just write. Unfortunately, we also often organize corporate events and dinners here, but this is a level of amateurism that, thank goodness, I don't often encounter, especially not at a 5 star hotel. Kudos to our lovely host Mozes, who was able to make the evening a bit interesting, 5 stars for him. We don't come here anymore.

Dit is absoluut niet de ervaring die we onze gasten willen bieden, en we bieden onze oprechte excuses aan voor de tekortkomingen die u heeft ervaren.
Het spijt ons te horen dat de Szechuan-avond niet voldeed aan de smaakverwachtingen en dat de gerechten inspiratieloos en vlak werden bevonden. Dit is zeker niet het hoge niveau waar we naar streven. Uw feedback over de presentatie en smaak van de gerechten nemen we zeer serieus en zullen we direct met het keukenteam bespreken om ervoor te zorgen dat dergelijke situaties niet meer voorkomen.

We had a wonderful experience in taiko a few days ago, no doubt this is one of the best Japanese/- east kitchens in Amsterdam these days, the restaurant is sophisticated, each dish is perfectly ‘designed’ and the combination of flavors is amazing, all senses are being triggered.
The service is very punctual, explanations of the dishes as well as timing are perfect!
I would to thank David one of the waiters for his smile and dedication.

We were a group of 5 and came for dinner. Made reservation on line. Everybody had the Omakase Tasting menu with the wine pairing. Dinner was amazing we had 8 courses, some better than others but all in all good. The Ambiance is amazing, upon arrival we were greeted and our coats were hung. Then there was a Japanese drummer that played a drum while we entered, kind of made us feel VIP...hahah. We had an AMAZING server a young man and his name is Jort. He made our visit and experience really extra and above. He was very knowledgeable and made sure to tell us all the ingerdients and origin of the food we were served. He is a valuable part of their team. The wine pairing was strange and not something i would have paired with the food we ate and i thought it strange that we were not all served the Champain in different glasses and the Sommelier did not really have the patience to explain the wine we were being served and kind of just poured the glasses without having patience to wait for the server to explain the food we were being served....maybe a bad day for him. All in all we enjoyed the dinner and we would come again.
