We shared many dishes as this bistro and were enchanted with one after the other. Ask the waitstaff to explain them, as many of the ingredients and herbs used have been forged from the forests in the North. The fish dishes were especially creative.

We went in with zero expectations but were blown away by this new cuisine style. New Nordic Cuisine is food produced with a focus on taste, complexity, and diversity, drawing from local resources including forgotten varieties and breeds, and incorporating old processing methods and new ideas. Each dish was a virtual symphony of flavors.

On a really cold day in the Old Quebec, I was really eager to have such a yummy brunch... the dishes are based on really traditional dishes but the chef has brought them to another level. We had the Angus beef. Very tender and accompanied mainly with roasted red beets. Dessert Crème Brûlé with cassis sauce. We were nine and everyone agreed... a 5 star meal. We will return.
