Holly! We totally get what you're saying. In our experience, there are two styles of Margherita. One is fresh tomatoes, mozzarella, and basil, modeled after that mythical pizza made for Queen Margherita on that mythical day oh so many years ago. And another, which is sauce, very little cheese, and floating islands of fresh mozzarella, often with fresh basil cut over the top after the pie comes out of the oven. We LOVE that style, and have often considered adding it to our menu. Alas, for our signature pie, we chose the former Margherita and love the freshness of the diced tomatoes. You might really enjoy simply adding fresh mozzarella, garlic, and basil to our straight cheese pie. It falls somewhere between the two styles I mention above, but is actually similar to a Margherita I knew well in my hometown, Philadelphia. Give it a shot? And thanks so much for the feedback.
