My wife and I visited Nimmy and Paul's B&B to undertake a Cooking Class as part of our luxury guided tour of India. Walking through the doors of the white two storey home, we felt that we had entered a film set and restaurant. That is exactly what it turned out to be. A very professional presentation of the spice culture of the Kerala Region followed. We were enthralled by our teacher pouring spice into pans and with a few shakes of a spatula, mysterious fragrances wafted around the room. It was with great excitement that we learnt that all the meals made on that day would be served as our lunch. Paul was a gracious host and supported Nimmy in sharing her cooking expertise with us. A group of able assistants helped prepare food in a large kitchen adjoining the room containing the presentation cook top, so there would definitely be enough food for a coach load of hungry tourists. Nimmy and Paul are so one of a kind you can’t really appreciate it until you experience it. We were two of a group of twenty who benefited from Nimmy and Paul’s gracious welcome, their new home, up close and personal lessons on Southern Indian cooking and a friendliness that is beyond compare. Nimmy is a natural teacher, cook, and transparent person; one of a kind. She has a set up that can accommodate up to about 25 yo 30 people, a camera over her cooktop and a flat screen to show what she is doing, and a mike turned on so all can here. She is patient in explaining what she is doing and cooks an entire meal for all right in front of you. Questions about food elements and possible substitutions are handled with grace and understanding. This is a later in life career for Nimmy who has found herself offering a wonderful service, a lesson in life and cooking and food that she speaks to from the heart. While she has a persona that is serious and focused when teaching and cooking, when alone or one on one she is the kind, listening, and caring person that you would anticipate. Came to this beautiful house to see a cooking demonstration. We’ll set up and was given a booklet with the recipes in to follow. Very professional and we then got to have the food for lunch. Interesting experience.
This is a must do if you'd like to learn a little more about Southern Indian cuisine. Didn't stay here, but had a delicious lunch served in a cool, clean, comfortable dining area and then were treated to Nimmy's entertaining and informative cooking class. Delicious and informative experience.
We went for a cookery class. Nimmy was brilliant at explaining everything. She and Paul welcomed us into their home and were friendly and courteous. Nimmy spoke about blending spices and what goes well with each dish. She talked about using spices with fruit and freezing them to help keep them longer. Each of the dishes created were a pleasure and danced beautifully on the palette. I learnt so much and will use the recipe book on my return home. Thank you.
