Castello is the largest of the six sestieri (districts), and the only one not facing onto the Grand Canal. More than half of Castello is situated within Arsenale, the naval base, which occupies over one-fifth the area of Venice. This gentrified maritime neighbourhood feels busy but casual. Castello’s side streets are laid back, with small boats lining canals criss-crossed by laundry. Semiannual exhibitions add a strong artsy current to the Arsenale area. Via Garibaldi in Castello, with its shops and bars, has one of Venice's rare straight and wide boulevards. When a large ship turns around the Lido to enter the Giudecca Canal, the startling sight creates an illusion that it will run aground right on Via Garibaldi! Families treasure Giardini near the island's tip, green with rare trees and grass, and Riva degli Schiavoni is a popular spot for Venetians to take a stroll to watch the sunset.

We are staying at this hotel on a room only basis. Could we pay for breakfast on an adhoc basis if we decided we wanted it during our stay? If so what is the cost of the breakfast buffet per day/ per person?
Yes you can pay for breakfast. I think it was quite expensive at about €30 which is why we pushed to have it included in our deal.

We intend to use the water bus that you can get from the Airport. What water bus line is the best to use to get to this hotel however? Do the water buses run all the time or do they stop at night as we have an evening flight?
Preferable choice would be to pre-book your private taxi and enjoy the views leading to your Hotel. Scenic romantic route to start your journey in Venice.

How do we get the water taxi from train station to hotel? Do we need to pre book or just go to a certain point and get on?
Pricewise on either side of taking a private water taxi: (1) If you don't have a whole lot of luggage, it's fun and a whole lot cheaper to take the Vaporetto (the Venetian equivalent of a bus) down the Grand Canal into the Bacino di San Marco on which the Metropole is located. Catch the #1 line at the stop right in front of Stazione Santa Lucia (the stop name is "Ferrovia") and get off at San Marco-San Zaccaria - you can't miss it because the stop is right in front of the front door of the hotel. (2) The Metropole will send someone to meet you at the station, take care of your luggage and put you on a private boat which takes you to their private dock on the side canal where staff will meet you. It's a bit pricy, but if you've had a long trip it's a nice luxury to indulge yourself. You book this service directly with the hotel and it's added to your bill.

Does this hotel include free RT airport to hotel transfers?
Don't know what RT means (it is advisable to avoid acronyms), but there is no road between the airport and Venice (which is on an island) and the hotel does help with transfer booking by water taxi, but it is not free (in fact quite expensive, around 100 €).

if you book a tour to Doges and St Marks are you allowed to stay there after the tour is over? Might sound silly but I'm not sure and don't know which one to pick??
I wouldn't book a tour of either. Just go there on your own initiative then you can spend as little or as long as you like at either place. Everyone speaks English so it would be no different to you going to downtown Manhattan! Everything is so easy to find. Even if you don't have a map, it's all on your smart phone.
