If we want to go night ski, it would be too late for us to eat at the restaurants as they all close at 9pm. Any other restaurants nearby within walking distance? What time do the restaurants at Ichinose close? Any further info regarding dinner??

I was there two weeks ago. There is no other dining option around the Prince, and I thought the meals were bad and expensive - so I understand why you ask. As you suspect you need to go to Ichinose. You need to order a taxi or go with a local bus (15 minutes). Most of the restaurants are in other hotels. Did not try anyone myself though so I can't recommend anyone. Good luck.
