Hello Mr Anacleto, We would like to thank you for your comments as each input helps us to raise our standards. Regarding the bedding, our website displays accurately the setting of the rooms, composed of massive vintage masterpieces furnitures, so the guests can choose thoroughly the room that will suits their needs, a massive Tuscan vintage double bed masterpiece sadly cannot be converted to a King size bed, specific request on booking can help us orientate our guests toward the best choice of room regarding this point. Regarding the dinner, our Chef prepares the Risotto « al dente », complying to Italian Northern style of cooking, but we are always keen to adapt if notified priorly. We fully recognize that the chicken may have come slightly dry, which is always unpredictable with free range chickens ( hence removing it from your bill ), we will do our best to avoid such thing to occur. Regarding the cost of the meals, we sincerely regret that you could have found it too expensive, we have to precise that the costs of the meals have nothing to do with the sophistication of the meals, but very much because of the ingredients we pride ourselves to use ! We do not purchase from distributors delivering industrial grade ingredients, but instead are regularly taking long drives to tour and collect the most genuine products from regional suppliers , on top of maintening our own estate providing us with boars, deers, eggs, homegrown vegetables and fruits. To be able to serve full organic meals in the healthiest possible way and preserve tradition, we have to charge a certain price. Dear Michael, We are sorry to have received these comments, especially since you expressed your concernswhile staying with us and we thought those points were clarified. We remember your input about the aircon being right next to the bed. The aircon is 2.5 meters away from the bed and it is the latest generation of air conditioning units from Olimpia. These units are required for historical buildings such as ours in order to maintain the façade. Nomalfunctions were reported either before, after or during your stay. With regards to additional chairs on the terrace, we are surprised to hear this as your Suite was equipped with a total of 4 chairs on the lower terrace and a large table with two comfortable benches able to accommodate 6 to 8 people under the pergola. If we knew there was a request for additional seating we wold have been more than happy to accommodate your request. As stated in our property description and during the tour of the property, we prepare most of our meals using homegrown produce. The rest of our ingredients are sourced from nearby farmers and local producers. We do not use store-bought products as that goes against our ethos of preparing wholesome, organic, seasonal meals for our clients. We do not aim to compete with the variety on offer at Maldivian resorts. Fresh Juice prepared with seasonal fruits is always provided, and we made sure you received it promptly, as you requested from the first day. We do serve Italian espresso as we have an espresso machine. As we do not use the same ingredients that an average restaurant would, our meals are more expensive, even for children. The price reflects the fact that our ingredients are all organic. Regarding you interactions with the management, Carlo & Aurora dedicated a large part of their life to renovate this 11th century castle and finally are enjoying some well-deserved holidays. The management team on duty is always eager to speak to guests. Our general manager asked to speak to your wife but she declined the offer to speak about your impressions of the property and the services we provide. We are sorry you were not satisfied , and thus tried to follow up with you after your stay.
